I am very excited to be part of Team GB Butchery. To have the opportunity to work with and around some of the best butchers in the world is incredible.
Throughout my 15-year career I have become obsessed with the craft, and have come to believe that butchery is more than just feeding people, it is an artform and I endeavour to show that through my daily work.
