P R E G N A N C Y | P O S T P A R T U M | W E I G H T L O S S “I dreaded the thought of losing my baby weight this fourth time around. I don’t know why, I only gained 55 pounds. I’m also 10 years older than I was when I had my first baby, so I naturally assumed that it would take me longer than the 9-12 months that it had for the first three babies. This morning, I hesitantly stepped onto the scale. I’ve been trying to eat healthier, but I’ve been very, hmmm, let’s say “flexible” with myself, and careful not to restrict too many calories since I’m breastfeeding. I’m also an enneagram 7- the equivalent of Tigger from Winnie the Pooh. We like to have fun. Try new things. Be spontaneous. Did I mention fun? So you know what’s NOT fun? Starving myself, and holding myself hostage on a diet that’s just not practical for me. Maybe for other people, but this girl is not your meal plan diet girl. You know what is fun though? Feeding my body with supplements that balance my blood sugar (helping me combat junk cravings). Supplements that give me natural, sustainable energy (unlike caffeine- although I still loveeee and drink my coffee). Supplements that help me fight off the bad bacteria in my gut (that basically affect all other parts of my body). My tofu and vegetable scramble is a perfect plant based breakfast that is not only delicious, but also looks really pretty too. It's also a great alternative to eggs (as I know many of you are intolerant to eggs, even if you're not veggo or vegan). Use any vegetables you have on hand that you can tolerate - this is a great way to use up leftover veggies that may otherwise rot in the fridge.⁠ Grab the recipe from my website (link in bio) or save this post for future reference (recipe below). What is the connection between gut health and longevity? Though oftentimes overlooked, gut health has a prominent role in longevity and improving health span or the amount of our lives we spend in good health. Central to this is a condition called intestinal permeability, commonly known as "leaky gut." This condition occurs when the integrity of the gut lining (or barrier) is compromised. The gut lining maintains a barrier that selectively allows nutrients to pass into the bloodstream while keeping harmful substances in the digestive tract. When the gut barrier is damaged, harmful substances such as lipopolysaccharides (LPS), can escape from the intestines into the bloodstream. LPS are potent inducers of inflammation and can trigger inflammatory immune responses when in circulation. This chronic inflammation is thought to be at the centre of many inflammatory, autoimmune and age-related diseases including cardiovascular, metabolic and neurodegenerative conditions 💪 Conversely, maintaining gut integrity and reducing inflammation can promote longevity and a healthier life. I love to dig in the dirt and my springtime garden has sprung! I look around at the kale, chard, spinach, garlic shoots, chives, parsley, radish tops, pea shoots, spring onions. . . and EVERYTHING IS GREEN. I'm ready for a reset! Are you? I've had more of my fair share of cake and chocolate over Easter and it's left me feeling bloated, my skin is terrible and I'm reliant on caffeine in order to assess my energy. If you don’t know what an Arepa is, don’t feel bad. Up until one month ago neither had I. But all that changed when Terry and I had dinner at a new Latin restaurant in town. Arepas are very simply flat cornbread, almost like thick tortillas, that hail from South America, specifically Venezuela and Colombia. However, a big difference is that traditional cornmeal is not used for Arepa, instead, masarepa, pre-cooked corn flour, is necessary to make arepa. I was intrigued so did a little research on this new food. The fact that arepas are gluten-free was a big plus for me as I am always looking for gluten-free bread options. And it truly could not be easier to whip up a batch of arepas. Roast Beet Salad Ingredients • 8 medium beetroots – keep leaves for salad • Extra Virgin olive oil for drizzling over • 1 teaspoon flaky sea salt, more as needed • 2 sprigs fresh thyme, more as needed • 2 cups salad greens & include beet leaves • ½ shallot, thinly sliced • ½ green apple, thinly sliced • ¼ cup toasted walnuts • 2 ounces goat cheese, torn • Microgreens, optional • Balsamic Vinaigrette • Flaky sea salt • Freshly ground black pepper 1. Position a rack in the center of the oven and heat to 400 F (200 C/Gas Mark 6). 2. Wash 8 medium beetroots under cold running water and pat dry with paper towels. Do not cut off the roots or stalk. As you work, take care not to break the skin. If you do, they will still taste good but will lose some flavor. 3. Place the beets in a large, roomy roasting pan and drizzle with approx. 3 tablespoons olive oil. Roll the beetroots in the oil to make sure they are well covered. Sprinkle with 1 teaspoon flaky sea salt and the leaves from 2 sprigs fresh thyme. 4. Bake until the beets are soft but not shrunken, 40 to 45 minutes. Remove the pan from the oven and leave the beets to cool. 5. Once cooled, rub the skin away with a paper towel; it should peel easily. If desired, wear a pair of rubber gloves when you do this to prevent your hands from turning red. 6. Chop the beetroots into thick chunks. 7. Assemble the salad with the greens, shallots, apples, beets, walnuts, cheese, and microgreens, if using. 8. Drizzle with balsamic vinaigrette. Season with flaky sea salt and pepper and serve. 9. my recent gut friendly meals >>> 🍊🍳🍔 can you tell i’ve been obsessed with oranges since we got from from Florida?? y’all NEED to get the sumo citrus oranges… they are pretty much massive clementines and they are SO SWEET and super easy peel, so perfect for on the go!! anywho, on to the meals… 🏃🏼‍♀️ - open face burgers… these are always my fav because (in my opinion) 1 burger patty isn’t enough for 2 pieces of bread, so i like to make them open face!! more protein and i usually pair with a smaller side like a fruit or veggie!! these are on toasted sourdough (extra probiotics from the fermentation), then topped with spinach, grass-fed cheese, pickles, and dijon mustard - high protein pancakes (no protein powder) topped with pure syrup + chicken sausage links. these are super high protein & high volume!! not too thick, but definitely gets your sweet tooth ✅ lmk if you want the recipe! - Chuck roast & egg on avocado toast… this hit the spotttt 🥵 we prepped chuck roast in the beginning of the week and have been making random meals here & there with it!! - grain free granola!!!! yooooo this stuff is GOOD. recipe is from @cookbyrafi - turkey burger on a bed of arugula with avocado, plus an orange & grass-fed cheese on the side!! as you can see the theme of my meals lately have been a protein source + healthy fat source + fruit (unless it’s sourdough bread) and it’s been great!!
