I don't blame you, it happens to me every Friday at about this time of day 🫣 Recently, this all-in-one breakfast skillet has been on repeat at my house, not only for brunch, but for lunch, and dinner too! Very loosely inspired by a shakshuka, which is my favorite brunch dish ever, this skillet is packed with veggies (sweet potato, kale, cherry tomatoes) and proteins (eggs, cheese, and white beans.) It's a breakfast of champions—and a dish that will make you want to jump out of bed 🏃🏼♀️➡️🏃🏼♀️➡️🏃🏼♀️➡️ . If you usually don't feel ready to cook early in the morning, you can prep the base of this skillet (sauce and veggies) days ahead of time. The morning of, simply reheat, mix in the cheese, crack in the eggs, pop in the oven and you're done! Serve with toasted baguette and you're basically in brunch heaven 😇 .
