ROAST HONEY CARROT & BUTTER BEAN SOUP π₯π₯π₯ INGREDIENTS - 8 large carrots, roasted for 1.5 hours on 180 with: - 2 Tbsp honey - generous sprinkle of cinnamon - drizzle olive oil In a pot - 1 onion, cooked till brown - 3 tsp crushed garlic Add - 1L veg stock - 2 x can butter beans, drained - 1 Tbsp tomato paste - 1 tsp each: cumin, turmeric & paprika - salt and pepper - 1/2 bunch fresh parsley After blending add 2 cups of water (if not more) & 1/4 cup lemon juice!

R: sorry for the pause, Iβve been preoccupied with home readers π Here was a good example of some of the ways I like to fill a lunchbox. Tried to get some dairy in there, but apparently bocconcini was a no go. Went for a boiled egg instead. Has anyone else boarded the Easter bun train yet? I like getting fresh from the bakery if possible. These meatballs are a hit in our household also, let me know if youβre keen for the recipe.
