Carbonara outside. Because it was April and the weather was perfect and I needed to use some eggs. For carbonara, I usually use a ratio of one egg, one yolk, 2 oz. Pancetta, and a big handful of pecorino because I sick at measuring cheese. I add a minced garlic clove and some pepper. Between the pancetta and pecorino, this recipe never needs salt. That’s all I have for today. You should go make some carbonara.

Last post in my Pasta in Exile series. Number 11. This was the bridge between what I view as my exile (because I’m extra like that), and when I started to feel at home in the new kitchen (my mom’s kitchen). Enough that I could make an actual pasta sauce from scratch, and not just thaw something out or use a jarred sauce. Nothing wrong with either of those things, but cooking is therapy for me. I need the process. This dish was actually two pastas and two sauces: bucatini and angel hair, served with ricotta sauce and scallion pesto. The ricotta sauce was leftover from a separate project, and the scallion pesto was inspired by @sundaysghettis and his “Will it pesto” series. Made with quick-fried scallions, Marcona almonds, Parmesan cheese, an anchovy, garlic, some parsley, olive oil, and red pepper flakes. Blitzed in a food processor, then added to the hot pasta with the ricotta sauce with a little bit of pasta water to loosen it up, to make it into a creamy pesto. The picture didn’t come out like I wanted it to, but the sauce with the two different pasta shapes was spectacular. Looking forward to cooking more and posting more.

Pasta in Exile #10. Pasta and salmon and green beans. Probably the most well-rounded meal I ate the entire month of March. The pasta was Sfoglini ziti, and the sauce was a yellow tomato and olive pesto from Mutti. Super tasty and the olives made it very interesting. The salmon was roasted with fresh herbs, and the green beans were frozen and simmered (also with herbs, I believe). I think this might have been right around the day I found out I was going to get a divorce. If so, I had a lot of emotions going on. They’ve since leveled out, but that period was rough. In a happier note, I’ve made more original pasta dinners the past few nights in a row and am excited to pair them! My kitchen groove is back. 😆
