Scallops in a Lemon Butter Garlic Sauce Lemon Butter Sauce is good on literally anything. Seafood, chicken, steak, pasta, veggies. It’s my favorite go-to sauce to make. It should be yours too after you try this. If not, I might take it personally. Add these lil’ scallops to some rice with a side of broccoli. You’re welcome. You’ll need: A dozen scallops 1/2 stick of butter 2 tbsp minced garlic 1/2 freshly squeezed lemon Grated Parmesan cheese Dried basil Garlic powder Salt & Pepper Fresh thyme How I made it: In a medium-sized pan, add butter and minced garlic. Once it begins to bubble, add the scallops. Sprinkle salt, pepper, garlic powder, dried basil all over. Squeeze lemon juice on top. After about 5 min, flip them over and repeat the steps above. Make sure the scallops are browning. Sometimes I move mine into the oven and broil them for 5 min to get them slightly crispy on top without burning the butter. Once they’re browning, top with Parmesan cheese and fresh thyme. *Lemon chipotle sea scallops over a sautéed cauliflower rice & mixed veggie medley* Easy & low carb, perfect for a quick healthy meal! I baked these air scallops in the air fryer (3 minutes each side & 1 minute on broil) and they came out PERFECT. Ready in 7 minutes. I cooked my veggies first, using a combination of asparagus, broccoli, Brussel sprouts, onion, and pepper (each chopped into small pieces). While I started the scallops in the air fryer, I combined the veggies with my cauliflower rice, added spinach, fresh squeezed lemon, and seasonings, and sautéed everything together on med high to create a flavorful mixture ready to serve! Topped the rice medley with my now ready scallops, a squeeze of lemon, and some fresh parsley. BON APETIT 🍲 🤗 Of course, any rice, quinoa, etc of your choice can be used for the base instead of cauliflower. Succulent Scallops on a Bed of Velvety Corn Puree Ingredients: 12 large sea scallops 2 tablespoons olive oil Salt and freshly ground black pepper 2 cups fresh corn kernels 1/2 cup heavy cream 2 tablespoons unsalted butter 1 garlic clove, minced 1/4 teaspoon paprika Fresh herbs for garnish Directions: Pat the scallops dry and season with salt and pepper. In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add scallops and sear for about 2 minutes on each side until golden brown. Remove from skillet and keep warm. Happy Christmas Eve! So this will be my last post of the year before I take a break from socials to enjoy the holidays. These are my pan seared scallops with coconut and cauliflower puree, crispy Carmarthen ham, turmeric roasted cauli, and a little drizzle of curry oil. I know it might sound a bit cheffy/bouji, but trust me, it’s dead easy to whip up. If you’re entertaining, as I am tonight, it’s great as you can make most of the components ahead and reheat too. Your guests will think you’ve gone to a lot more effort than you actually have – they key to great hosting! You can find the recipe as ever in Desi Kitchen @michaeljbooks go to page 301. Serve 2 as a starter, 3 as a main and add a potato side. Growing up my Mom had a repertoire of about a dozen dishes that she would rotate through. One of them was a baked scallops with breadcrumbs, a dish that I always loved. This is a version of that dish that I love to make now. It’s so simple, and can get thrown together in a matter of minutes, making it perfect for a mid week meal . . . Baked Scallops with Parmesan Breadcrumbs . . . 3 tbls olive oil, divided 1 lb bay scallops (I definitely prefer the smaller bay scallops for this dish because the are way more affordable than the larger sea scallops… also, it’s what Mom used😉) ¼ tsp kosher salt
¼ tsp ground pepper 
3 tbls butter, melted Juice and zest of one lemon 
3 tbls chopped shallot or onion 1 cup panko breadcrumbs 1/3 cup Parmesan cheese 
3 tbls chopped fresh parsley Preheat oven to 425F. Drizzle the bottom of a 9” square baking dish with 1 tablespoon oil. Add the scallops to the dish and season with salt and pepper. Whisk melted butter, lemon juice and shallot in a bowl and pour over the scallops.
In another bowl, combine panko, Parmesan, lemon zest, parsley and the remaining 2 tbls oil. Sprinkle the mixture evenly over the scallops.

Ingrédients : 1 1/2 livres de pétoncles de mer 1/2 tasse de beurre non salé, fondu 3 gousses d'ail, émincées 2 cuillères à soupe de jus de citron frais 1/4 de tasse de persil frais, finement haché Sel et poivre au goût 1 tasse de chapelure assaisonnée Quartiers de citron pour le service (facultatif) Persil frais pour la garniture (facultatif) Mode d'emploi : Préchauffer le four à 200 °C (400 °F). Graisser légèrement un plat à four. Rincez les pétoncles sous l'eau froide et séchez-les avec du papier absorbant. Placez-les dans le plat de cuisson préparé en une seule couche. Dans un petit bol, mélanger le beurre fondu, l'ail émincé, le jus de citron, le persil haché, le sel et le poivre. Verser le mélange de beurre sur les pétoncles, en veillant à ce qu'ils soient uniformément enrobés. Saupoudrer la chapelure assaisonnée sur le dessus des pétoncles, en les recouvrant uniformément. Cuire au four préchauffé pendant 15 à 20 minutes ou jusqu'à ce que les pétoncles soient opaques et que la chapelure soit dorée. Retirer les coquilles Saint-Jacques du four. Servir chaud avec des quartiers de citron sur le côté pour les presser sur les pétoncles si vous le souhaitez.
