Tried making gluten free pasta using brown rice flour, tapioca starch and xanthan gum (& eggs of course). No particular reason, just wanted to try something different. The xanthan gum was supposed to give it more of a pasta dough consistency, it did not.

The pros: Taste and texture, you'd never know it wasn't regular flour pasta.

The cons: The dough is a PAIN to work with. Took 3 times longer to run it through the pasta machine than regular pasta dough. π
