☀️ ITS. SO. WARM. IN. TORONTO. RIGHT. NOW. 😩 Seriously, my ice-making fridge cannot keep up with the demands.☃️ It’s during the heat-wave vibes like right now that I crave cold summer lunches. My current favourite? ⚡️Tuna pasta salad!! So easy to make, so nutritious, and (of course), SO yummy😋 And as an added BONUS? The longer you let the salad marinade in the amazing dressing the better it’ll taste; SO meal-prep worthy!!🤩
👩🍳 Make this yourself!
🥗 Salad Base:
* Pasta cooked al-dente in salted water (health tip: look for 100% whole-wheat or pasta made from legumes such as chickpeas or lentils instead of ones made from refined white flour!)
* Canned chunk tuna (health tip: look for cans labelled low-sodium!)
* Diced cucumbers
* Diced tomatoes
* Other diced veggie ideas: bell peppers, beets, red onion
🍯 Dressing:
* 2 tbsp wine vinegar (or apple cider/balsamic/rice vinegar)
* 1 tsp maple syrup (or honey)
* 2 cloves minced garlic
* Small chunk minced ginger
* Ground black pepper
💥 Optional Toppings:
* Italian seasoning (highly recommend!! I used a store-bought blend of dried thyme, oregano, and basil)
* Diced scallion
* Paprika
* Cayenne
* Additional salt and pepper
