Straw-Blue Berry Oat Muffins <br />These are great to make ahead and have ready to grab and go!  Makes a delicious breakfast or snack to curb those cravings! Nutrient packed and all healthy ingredients! .<br /><br />2 ripe bananas <br />1 Cup Frozen Strawberries<br />1 Cup unsweetened Almond Milk (or any non dairy milk)<br />1 Tsp Pure Vanilla Extract<br />3 Cups Old Fashioned Oats <br />2 Cups Oat Flour <br />3 Tbsp Flax Meal<br />1 1/2 Tsp Baking Powder<br />1/4 Tsp Salt<br />2 Tsp Cinnamon <br />2 Cups Frozen Blueberries .<br /><br />Wet Ingredients: Combine Bananas, Frozen Strawberries, Non Dairy Milk, & Vanilla Extract in food processor or blender.  Blend until smooth. .<br /><br />Dry Ingredients: Combine Old Fashioned Oats, Oat Flour, Flax Meal, Cinnamon, Baking Powder, and Salt in a large bowl and mix until well blended. .<br /><br />Pour Wet mixture into bowl of dry ingredients, stir well.  Fold in the 2 Cups Blueberries(I added a little extra because I love the berries in these). Tips - taste your batter and if itโ€™s not sweet enough for you add 2-3 TBSP Pure Maple Syrup. .<br /><br />Line muffin pan with liners and fill each liner. Bake at 350 degrees for approx 20 mins.  Let cool and store in airtight container in refrigerator!
