Peanut Butter Oat Muffins from the 4th edition of Muffins Fast and Fantastic by Susan Reimer
CHANGES I MADE
¤ I added a little vanilla bean paste. I can't be more accurate than that because I added the end of my @taylorandcolledge jar
¤ The recipe suggests adding chopped dried apricots. I thought that was an odd combination so I added 1 small chopped banana 🍌 instead
NOTES
¤ The recipe says to use:
75 g to 85 g sugar. I used 80 g
¤ I made 15 muffins of 55 to 65 g of batter
¤ I baked for 21 minutes at 190 C (but preheated the oven to 200 C and turned the temperature down when putting the muffins in the oven
¤ I omitted the optional chocolate chips
¤ The recipe just says "Peanut Butter", I used crunchy peanut butter
VERDICT
¤ Again, not very sweet, they taste "healthy", if you know what I mean. It's nice when you get a chunk of banana
¤ I think they would be good as a breakfast muffin
CHANGES I WOULD MAKE NEXT TIME
¤ I would add the 85 g of sugar
¤ I would add a full teaspoon of vanilla bean paste
¤ I would use 2🍌🍌 bananas
¤ If they were a treat I would add the chocolate chips
