Are you a fan of tomato season?
When I was growing up, I loved to follow my grandfather into his garden to pick ripe summer tomatoes. To this day, the smell of a fresh tomato vine is one of my absolute favorite aromas!
My grandfather grew up on a farm in rural North Carolina and although he went on to become an engineer, he never lost his green thumb.
Now when I pick tomatoes in my own backyard with my daughter, I still insist on eating most of them in the same way that my grandfather enjoyed them: simple, still warm from the sun with a pinch of salt.
So if you are currently wondering what to do with a sudden abundance of tomatoes at this point in the season, I highly recommend this simple tomato salad. It couldn’t be easier to make and it pairs well with a variety of seasonal dishes.
