This is a delicious baked blueberry cheesecake. Blueberries are are sweet, nutritious and wildly popular. often labelled as a superfood, they are low in calories and incredibly good for you. They are so tasty and convenient that many people consider them their favourite fruit.
This baked cheesecake has a scrumptious digestive biscuits and gingernut base. The filling was made with cream cheese, free range eggs, sour cream Greek yogurt and some amazing Full flavour vanilla pods.
To make the topping I just took two punnets of blueberries and heated them
Up in a saucepan. As the blueberries start to heat up they pop and make the most wonderful sweet topping.

I used a Kenwood KMIX KMX750 to make the filling (85543203) and a John
