“Snacky lunch” is one of my favorite mom hacks. I think any mom (homeschooler or not) can agree that we sometimes need a break in the kitchen. Years ago, inspired by my love of a good charcuterie tray, I started making colorful lunch trays with different textures and colors just to expose my picky kids to new foods. They didn’t always eat everything but I didn’t make a big deal out of it and slowly but surely they became more open-minded. Now it’s a quick lunch any of us can throw together and we can even eat while playing a game or reading.
