🧀You’re gonna wanna save this🧀<br />.<br />I talk to SOOOOO many mamas who struggle with what to make for dinner… not because they don’t have @pinterest boards FULL of delicious meals but because they have a picky eater to contend with.<br />.<br />I swear we all have one...🤦‍♀️ruining dinner because TONIGHT they no longer will eat their favourite food from last week...😒<br />.<br />I was joking the other day that my oldest lives off of carbs and cheese…. And it got me thinking (and by thinking I mean plotting😈) how TF do I create a meal we can ALL enjoy, that fits my nutrition goals, AND still gives her that carb & cheese factor??<br />.<br />I think we nailed it! I went back to my Carb Lover’s Guide and whipped this little number up last night…<br />.<br />Ingredients:<br />1 head cauliflower raw<br />½ cup Mozzarella Cheese shredded<br />½ cupParmesan Cheese shaved<br />1 large egg<br />½ tablespoon garlic minced<br />½ tablespoon fresh basil chopped<br />½ tablespoon fresh Italian flat-leaf<br />parsley chopped<br />1 teaspoon salt<br />½ teaspoon groundblack pepper<br />¾ cup Mozzarella Cheese shredded (reserved)<br />.<br />Directions:<br />1. Preheat oven to 425°F and line a baking sheet with Parchment paper or a silicone baking mat. (Just gonna say I forgot this step luckily my tray is non-stick)<br />2. Rice the cauliflower by coring it and breaking it into florets.Then place it in the bowl of a food processor And pulse until it is the texture of rice. 🗝(If your Cauliflower seems excessively moist, squeeze the riced, raw cauliflower in a paper towel to help remove moisture.)<br />3. In a large bowl, mix the riced cauliflower, Mozzarella cheese, Parmesan cheese, egg, fresh garlic, fresh basil, fresh parsley, salt, and black pepper until combined and Holds together. Place the mixture onto the lined baking sheet and spread out into a rectangle about 1/4"thick.<br />4. Bake in the preheated oven for 10-12 minutes.Remove from oven and top with 3/4 cup shredded Mozzarella cheese and return to oven to continue baking until the<br />Cheese is melted and starting  to brown. 5. Cool about 10 minutes and cut into 'breadsticks'. Garnish with fresh herbs and Parmesan cheese.
