My tip for perfect pasta...<br />1. Lots of water in the pan.<br />2. Bring to the boil, a full on rolling boil!<br />3. Now add the salt. Always add salt after its started boiling. If you add it before it takes longer to boil. The water should taste like sea water. Don't be shy with the salt!<br />4. Stir occasionally to stop sticking especially at the beginning. DO NOT ADD Oil, this will only float at the top and will make the pasta slippy so that sauce will not stick.<br />5. Taste the past a couple of mins before the packet says its done. You keep tasting untill there is no chew in the middle.<br />6. Before draining add a little cold water to the pan. This stops/slows the continues cooking of the pasta. Especially if you are slow to add the sauce like me.<br />7. Now drain the pasta and add it back to the pan.<br />8. Now mix in the sauce. Take care, don't mash the pasta!<br />9. Rigatoni is the perfect pasta for a ragu as the meat sticks inside and outside the pasta.<br />10. Add cheese if you like. (who doesn't?)<br />Buon appetito 😋<br /><br />Bonus tip...<br />Don't use  spaghetti with ragu! You just end up with a pile of sauce at the bottom!
