. Sweet Potato Toast 3 ways 😍 Starting the week with one of my favorite breakfasts ever! Topped sweet and savory so you have a little bit of everything 👌🏻 One of the first things I ever made and shared on this account 2 1/2 years ago and I still have them weekly! Super easy + tasty + an inexpensive way to have gf/paleo toast. -<br />-<br />Don’t get me wrong, I love to buy a loaf of of fancier bread and keep it in the freezer but this is a good alternative if you’re trying to eat gf or grain free without spending lots of 💴 But even if you aren’t, this is just a delicious breakfast. You can make the sweet potatoes a day or two before then top them in the morning when you’re ready. But also they’re ready in about 12 minutes if you don’t plan ahead 😉 I recommend topping them 3 ways because the more toppings, the better 😎 Happy Monday!! -<br />-<br />#breakfast details 👉🏻 3 slices of sweet potato toast (about 1/2 a large sweet potato) <br />Take a large sweet potato and slice into toast shape. I sliced mine into about 5-6 slices. You can microwave your sweet potato if it’s too hard to slice. <br />Preheat oven to broil. Place the sweet potatoes on a baking sheet and bake on the bottom shelf for 12-15 minutes depending on how thin you slice them. You can also toast them but I think that takes longer and it’s harder to judge when they’re done or not. You want them to be soft. <br />Topped with: sautéed spinach + 1 boiled egg + @traderjoes everything but the bagel seasoning + @aldiusa Pb with banana and cinnamon + 1/2 avocado<br />.<br />😣.
