You can use whatever pasta you like, I used @traderjoes organic Gigli pasta which worked perfect for the lasagna vibes👌<br />🌟Dairy-free | Vegan<br />#loveineverymorsel<br />•<br />•<br />White Veggie Lasagna Soup👇🏼<br />Cashew cream:<br />Soak 1 1/2 cups raw cashews in boiling water for 15 min. Drain + add to high speed blender along with,<br />1 1/2 tbsp fresh lemon juice<br />1 1/2 cup vegetable broth<br />pinch sea-salt + black pepper<br />Purée until smooth. Set aside<br />Soup:<br />In a Large dutch oven/pot:<br />Add 2 tbsp olive oil on medium heat. Sauté 1/2 chopped sweet onion, 3 tbsp minced garlic until translucent (about 3-5 min) add in 1 cup sliced zucchini, 1 cup sliced baby Bella mushrooms + pinch of sea salt/pepper. Sauté for another 5 min or until softened. Add in 6 1/2 cups veggie broth, 1/4 cup nutritional yeast, juice from two lemons, cashew cream + season with thyme, parsley, basil (just a sprinkle of each) + sea salt if needed.<br />Lower heat to a simmer + add in 3 cups pasta of choice. Let simmer until pasta is cooked. <br />Lastly add in 1 cup baby spinach. Stir + serve! 👌<br />.

White Veggie Lasagna Soup👇🏼
