PUMPKIN SPICE PANCAKES 🎃. Breakfast is basically Autumn on a plate and I'm living for it. Pumpkin spice pancakes topped with caramelised banana 🍌, yoghurt 🐮, peanut butter 🥜, dark chocolate shavings 🍫 & a dusting of cinnamon 😍. These beauties came from finding a can of pumpkin purée in Sainsbury's (from the American food section), which was much easier than cooking up my own pumpkin and blending, so I definitely recommend this as a shortcut 👍.<br />.<br />Recipe:<br />🎃 Blend together 40g oats with 1/2 tsp baking powder, 1 large egg, 100g pumpkin purée, 1 tsp sugar/sweetener (or use a drizzle of honey/maple syrup) and 1/2 tsp each of cinnamon and nutmeg.<br />🎃 Heat a large non-stick frying pan with a little oil/oil spray and spoon in the batter, using around 1 tbsp of mixture per pancake (you may need to do this in batches depending on the size of your pan).<br />🎃 Cook on a medium heat for 2-3 minutes until small bubbles start to form on the surface, then flip and cook for a further couple of minutes.<br />🎃 Serve and add your toppings.
