A dish of discoveries with sashimi four ways as our first course on the menu:
• Hotate with olive oil, lemon and radish
• Sayori with smoked soy, kyuri and kinome
• Hirame with ponzu, shio kombu and lemon zest
• Madai with akegarashi, shiso and sudachi
In the center of the tray was a printed scroll with a message about the origins of sashimi and why Chef began with this dish. The flavours of each were so clean and bright allowing the freshness of the fish and scallops to shine. Swipe for the video
