#2 RED CABBAGE 💜
⠀
Between purple and green? I go for purple eyes!
⠀
And between red and green CABBAGE? ⠀
I choose both! 🤗⠀
But red cabbage definitely has a different nutritional profile: 🕵🏻♀️
⠀
⬆️ Higher Vit A
⠀
⬆️ Higher Vit C
⠀
⬆️ Higher Iron 🔸
⠀
⬆️ Higher Anthocyanins 🔹
⠀
🔸Yessss, red cabbage has the benefit of being an IRON and vitamin C rich vegetable! It is important that these 2 nutrients are coupled together in our everyday diet because vitamin C boosts the absorption of Iron from veggies in our body which otherwise would be metabolised in lower amounts.
⠀
🔹 Researchers compared antioxidant potential of six plants high in anthocyanins. Red cabbage successfully protected against one type of internal DNA damage caused by a specific colon cancer cell line, suggesting red cabbage may be a cancer-fighting food. ✋🏼Then at the top of the list for phytonutrient antioxidants in red cabbage e find polyphenols, the primary factor in cabbage's overall antioxidant capacity and cancer preventive nutrients.
⠀
Nicknamed "THE DOCTOR OF THE POOR"👨🏽⚕️, there would be much to say about the diuretic and medicinal properties of cabbage. ⚕️ Known since the Paleolithic, for centuries cabbage was the only food which, during the winter months, guaranteed a sufficient ammount of vitamins and minerals and it is still one of the most nutritious and healthy vegetables in the 🌍.
⠀
You can use RED CABBAGE raw in salad🥗 or cook it as a starter, side or main dish. Personally I LOVE red cabbage pureed soup!⠀
