Vegan Spicy Ramen 🥢🍜

1. 1 1/2 tbsp fresh ground ginger
2. 1 1/2 tbsp minced garlic
3. 8 cups vegetable broth
4. 2 tbsp GF soy sauce
5. 3/4 tsp salt
6. 4 tbsp sriracha (or to taste)
7. 3 tbsp white miso
8. 12oz GF ramen noodles
9. Chopped green onion
10. Purple cabbage
11. Corn
12. Bean sprouts •
•ᴅɪʀᴇᴄᴛɪᴏɴs•
1. In a large pot on medium heat add 1/2 cup of broth, garlic, and ginger. Once it comes to a simmer, cook for 5 minutes.
2. Meanwhile, in a separate bowl whisk miso with 1/2 cup broth until smooth and dissolved.
3. Add miso mixture along with 7 cups of broth, salt, sriracha, and soy sauce. Bring back up to a simmer and cook for 5 minutes.
4. Add in ramen noodles and cook for 3 minutes or until soft.
5. Serve with corn, bean sprouts, green onion, and purple cabbage
