I had another baking win today (despite that my presentation is a little messy as it was getting late, & I needed my teatime treat pronto!). I made gluten free, vegan hazelnut cake bars with dark chocolate butterless buttercream frosting & holy smokes they are HEAVEN. I should clarify that when I say they’re gluten free & vegan, what I care most about is the positive nutrition gained by avoiding processed wheat & dairy fat. This cake replaces simple carbohydrates & saturated fat with whole grains (complex carbohydrates), fiber, nuts, healthy fats, & good ol’ dark chocolate. So not only do these bad boys taste like some kind o’ wonderful, but they actually boast many nutritional benefits! If you can have both... why not?! You CAN have both.
