Leftover Creation: Fish Taco

We are all familiar with my love for Leftovers, and this one was ridiculously yummy!

Let me paint you a picture... It was midnight and I was starving. Had a quick chat with the hubs about who gets the leftover 😝 And lucky me... he was more interested in a Carrot Cake than the Fish 🤣 plus the 🍰 was enough for 2! HA!

This perfect bite was ready in less than 10 mins! I quickly reheated the Tilapia in a small pan, while that was going, chopped half a Tomato & a bit of Cilantro. Added a squeeze of Lemon & dollop of Sour Cream.

And a bit of Parmesan that’s not pictured because I added it while eating 😆.
