Posted @withrepost β’ @eatingwith_em HAPPY MUFFIN MONDAY! ππ»π§π I may be en route to NYC, but I saved a few of these BANANA OAT MUFFINS in my freezer for my return ππ»π theyβre soft, moist π and have the most perfect banana-y flavor ππ» iβve gotta cut this short because iβm actually starting to drool and wonder why I didnβt pack any with me!!!!! π€¦π»ββοΈ so make these to make your monday a lil better (and me a lil jealous) π

wet:
2 mashed bananas
2 eggs
1/4 cup melted and cooled coconut oil
1 tsp vanilla
*1/3 cup coconut sugar (optional)*
dry:
1 and 1/4 cup almond flour
1/4 cup gluten free quick oats
1 tsp baking soda
1/4 tsp cinnamon
combine wet. add dry. fill a muffin tin and top with chocolate chips if you like! bake at 350F for 15-18 minutes or until toothpick comes out clean.
