Posted @withrepost β€’ @eatingwith_em HAPPY MUFFIN MONDAY! πŸ’ƒπŸ»πŸ§πŸ˜‹ I may be en route to NYC, but I saved a few of these BANANA OAT MUFFINS in my freezer for my return πŸ™πŸ»πŸ˜Š they’re soft, moist πŸ™Š and have the most perfect banana-y flavor πŸ‘πŸ» i’ve gotta cut this short because i’m actually starting to drool and wonder why I didn’t pack any with me!!!!! πŸ€¦πŸ»β€β™€οΈ so make these to make your monday a lil better (and me a lil jealous) 😘<br />β€’<br />wet:<br />2 mashed bananas<br />2 eggs<br />1/4 cup melted and cooled coconut oil<br />1 tsp vanilla<br />*1/3 cup coconut sugar (optional)*<br />dry:<br />1 and 1/4 cup almond flour<br />1/4 cup gluten free quick oats<br />1 tsp baking soda<br />1/4 tsp cinnamon<br />combine wet. add dry. fill a muffin tin and top with chocolate chips if you like! bake at 350F for 15-18 minutes or until toothpick comes out clean.<br />#eeeeats #nomnom #foodbites #healthyrecipes #cookiebites #cleaneating
