Think baked Alaska, steak Diane, coronation chicken and prawn cocktail - or rather its South African incarnation avocado Ritz!
Traditionally, this consists of prawn cocktail and Marie Rose sauce served in the hollow of half an avocado after the stone is removed, garnished with a slice of lemon. My deconstructed take on this classic serves the avocado and prawn cocktail separately and substitutes gorgeous ruby grapefruit segments for a different citrus twist.
