Shake for 30 seconds and strain over crushed ice into a Collins.<br /><br />Use the back of a bar spoon to float the lambrusco over the base of the cocktail.<br /><br />Finally, microplane a sprinkling of lime zest on top of the drink, and garnish with skewered pineapple and a few pineapple leaves placed vertically and serve.
