A rather apt name, as I feel you should make these a target for your gastronomic affection. <br /><br />INGREDIENTS<br /><br />100g cold unsalted butter, cubed (@lurpakuk)<br />100g golden caster sugar (@billingtonsuk)<br />1 tsp vanilla extract (@nielsenmasseyuk)<br />200g plain flour (@dovesfarm)<br />1 egg<br />Icing sugar, for dusting<br />Apricot jam, for filling<br /><br />METHOD<br /><br />Preheat the oven to 180C/Gas Mark 4 and line a baking sheet with greaseproof paper.<br /><br />Place the flour, butter and sugar in a large bowl. Coat the butter in the flour and rub it between your fingers until you have a breadcrumb-like consistency.<br /><br />Add the egg and vanilla extract. Mix with a wooden spoon until a smooth dough coheres. Wrap the dough in cling film and chill in the fridge for 30 minutes.<br /><br />Roll out the dough on a floured surface to a 3-4mm thickness. Cut out as many rounds as you can, making sure you have an even number. With a smaller biscuit cutter, cut out a hole in the middle of half the rounds.<br /><br />Place the biscuits on the baking sheet and bake for 8-10 minutes.<br /><br />Let the biscuits cool before dusting the rounds with a hole with icing sugar.
