OCCHI DI BUE
Occhi di bue. Otherwise known as "bull's eyes." A rather apt name, as I feel you should make these a target for your gastronomic affection.
INGREDIENTS
100g cold unsalted butter, cubed (@lurpakuk)
100g golden caster sugar (@billingtonsuk)
1 tsp vanilla extract (@nielsenmasseyuk)
200g plain flour (@dovesfarm)
1 egg
Icing sugar, for dusting
Apricot jam, for filling
METHOD
Preheat the oven to 180C/Gas Mark 4 and line a baking sheet with greaseproof paper.
Place the flour, butter and sugar in a large bowl. Coat the butter in the flour and rub it between your fingers until you have a breadcrumb-like consistency.
Add the egg and vanilla extract. Mix with a wooden spoon until a smooth dough coheres. Wrap the dough in cling film and chill in the fridge for 30 minutes.
Roll out the dough on a floured surface to a 3-4mm thickness. Cut out as many rounds as you can, making sure you have an even number. With a smaller biscuit cutter, cut out a hole in the middle of half the rounds.
Place the biscuits on the baking sheet and bake for 8-10 minutes.
Let the biscuits cool before dusting the rounds with a hole with icing sugar. Then sandwich the biscuits together with a little bit of jam.
