What recipe do you like the most?<br /><br />by @Plantyou<br /><br />1️⃣ Chana Masala Inspired Chickpea Coconut Curry<br /><br />Ingredients<br /><br />1 tbsp olive oil<br />1 yellow onion, diced<br />3 cloves garlic, minced<br />2 tbsp curry powder<br />1 tsp cumin<br />½ tsp turmeric<br />½ tsp paprika<br />¾ tsp salt<br />1 can crushed tomatoes, 15 oz<br />1 can coconut milk, 13.5 oz<br />1 can chickpeas, drained and rinsed<br />1 tbsp almond butter, optional<br />1 handful spinach<br /><br />Instructions<br /><br />In a pan over medium heat, add the onion and olive oil. Stir until fragrant, approximately 3 minutes.<br />Next, add the garlic, curry powder, cumin, turmeric, paprika and salt. Stir until fragrant, approximately 5 minutes.<br />Add the crushed tomatoes, coconut milk, chickpeas and almond butter. Bring to a simmer, then lower the heat, and cook on low for 6 to 8 minutes, until everything is combined and warm.<br />Stir in the spinach until it is wilted. Serve with fresh cilantro and naan bread as desired.<br /><br />2️⃣ Golden Glow Soup paired with my favorite crackers<br />.<br />🙏Lends 4 to 6 servings

4 cloves garlic, minced<br />1 rib celery, diced<br />1 tsp dried oregano<br />1/2 tsp black pepper<br />7 cups vegetable broth<br />1 can white beans, drained and rinsed<br />2 lemons, squeezed<br />1 handful fresh kale<br />1/4 cup tahini<br />1 tsp lemon zest<br />1 cup orzo<br />1/4 cup fresh dill<br />1 tsp turmeric<br />.<br />In a pot over medium heat, add the onion, carrot, celery and garlic. Sauté until softened, approximately 5 minutes.<br />.<br />Add the vegetable broth, drained and rinsed can of white beans, lemon juice and lemon zest to the pot. Bring to a boil, then simmer for 10 minutes covered.<br />.<br />Stir in the kale, fresh dill and orzo and cook for another 10 minutes until the orzo is cooked through, keeping the lid off and stirring intermittently to prevent the orzo from sticking.<br />Stir in the tahini and turmeric until combined and heated through. Enjoy!
