Tropical Mango Delight Sticky Rice
Recipe
Ingredients:
1 cup sticky rice (glutinous rice)
1 can (14 oz) coconut milk
1/4 cup sugar
1 pinch salt
2 ripe mangoes, peeled and sliced
Directions:
Rinse the sticky rice until the water runs clear. Soak in water for at least 4 hours or overnight.
Drain the rice and steam over medium heat for 20-25 minutes or until the rice is tender but still chewy.
While the rice is steaming, combine coconut milk, sugar, and salt in a saucepan. Heat until the sugar dissolves. Do not boil.
Once the rice is cooked, mix it with half of the coconut milk mixture. Let it sit for 15 minutes to absorb the flavors.
Serve the sticky rice with mango slices on the side. Drizzle the remaining coconut milk mixture over the top.
