Cook meatloaf according to package instructions. Preheat oven to 425F. Add full bag of frozen broccoli to a sheet pan and arrange in an even layer. Roast for approximately 15 minutes, with a goal of evaporating the water. Pull from oven, toss with drizzle of olive oil + salt and stir to combine. Roast for another 10 minutes or so, until browned. Saute one sliced medium yellow onion in 2 tbsp olive oil + salt to taste on medium heat for approximately 3 minutes. Increase to medium high heat and add 1 cup frozen spinach. Cook until warmed through, about 5 minutes. Slice 2 roasted bell peppers from the jar (into strips) and add to pan along w/ 3 cloves minced garlic. Cook for an additional 5 minutes, stirring frequently. Remove from heat and squeeze juice from one lemon into veggie mixture, stirring to combine. Slice meatloaf and toss broccoli with veggie mixture to serve.

#TJsPizzaContest TJ's Roasted Tomato and Parmesan Focaccia Bread TJ's Traditional Whole Milk Ricotta Cheese TJ's Vegan Kale, Cashew & Basil Pesto TJ's Quartered Marinated Artichokes TJ's Frozen Chopped Spinach 1 small yellow onion, thinly sliced 3 cloves garlic 2-3 tbsp olive oil Pinch of salt Cut the focaccia bread in half length-wise to create two flat pieces of bread. Scrape parmesan cheese off and set aside for topping later. See pictures for reference on cutting/scraping. I only used one half of cut bread for this recipe. Be sure to top the pizza cut side up. After slicing, cook bread according to package instructions and set aside until time to top. On medium heat, cook onion in 1 tbsp olive oil w/ a pinch of salt until browned, approximately 7 minutes. Set aside until time to top. In same pan, cook 1 cup frozen spinach on medium heat w/ a drizzle of oil until warmed through and most of the water has evaporated, about 7 minutes. Add 1 clove minced garlic and cook for 2 minutes longer, stirring frequently to prevent burning. Set aside until time to top. Drain approximately half the jar of artichokes and roughly chop. In same pan as above, cook artichokes on medium heat until browned, about 7 minutes. (They're marinated in oil so no need to add extra for browning.) Set aside until time to top. In same pan, heat 1 tbsp olive oil and 2 cloves minced garlic on medium-low (stirring frequently) until browned. Approximately 5 minutes. Set aside until after the bake. In a bowl, combine 3-4 tbsp ricotta with 2-3 tbsp pesto and stir until evenly incorporated. Spread the pesto/ricotta mixture over the bread, evenly coating from end to end. Next, top with a layer of onions, a layer of spinach, and a layer of artichoke. Repeat layers until ingredients are used. Bake in oven at 400F on top rack for 8-10 minutes. Remove from oven and sprinkle w/ reserved parmesan and drizzle with garlic oil. Let rest for 2 minutes before cutting into 4 pieces.

Next, top with the cooked onion, and then with bite sized pieces of meatloaf. Bake in oven at 400F on top rack for 8-10 minutes. Sprinkle with reserved parmesan after the bake. Let rest for 2 minutes before cutting into 4 pieces.

Cook ground meat of choice (beef here) with 2 cloves of minced garlic until browned, and then simmer in salsa of choice for 10 minutes. I like something a little fruity here, like mango or pineapple salsa. Trader Joe's frozen cauliflower rice is a big staple over here. Cook bag according to package instructions and then add 2 tbsp TJ's frozen roasted corn, cilantro to taste, 1/2 tsp each cumin/coriander, + a drizzle of hot honey, and cook until corn is warmed through. Heat a can of beans. Immediately after removing from heat, plate it and top with TJ's cheese of choice so it can get melty. I used pepper jack here. Chop romaine lettuce. Open bag of TJ's organic shredded cabbage. Slice a teeny tiny avocado. Screen grabs from TJ's website until I start remembering to take my own product pictures. #feastonlife #inmybowl

Cook chorizo according to package instructions. Make an egg to your liking. (I fried mine - clearly lol.) Smash one teeny tiny avocado with a squeeze of lime juice + sea salt. Rinse 1 can of beans, add 2 tbsp olive oil, juice of one lime, 1/2 tsp each cumin/coriander, a drizzle of hot honey, and lots of cilantro. Salt to taste. Cook frozen cauliflower rice according to package instructions. Once fully heated, add 2 tbsp Tomato-less corn salsa, a dash of cumin/coriander, and lots of cilantro. Stir until heated through, about 3 minutes. Put it all into a bowl, picking your desired portions of each component, and top with some quick pickled red onions: 1/2 cup each water/vinegar, 1 tsp salt, drizzle hot honey. Roast diced sweet potatoes drizzled w/ olive oil and curry powder at 425F for 25 mins. Heat carnitas according to package instructions. Make a quick cabbage slaw: 4tbsp olive oil, juice of 1 lime, 1 tsp hot honey, 1/2 tsp each cumin/coriander, lots of cilantro and green onion + 1 bag of TJ'S shredded organic cabbage. Quick pickled red onions: 1/2 cup vinegar, 1/2 cup water, 1 tsp salt + drizzle of hot honey. Let marinate at least 10 minutes. Lasts about a week in fridge. Coconut rice: Melt 1 tbsp coconut oil in saucepan on medium heat. Add 1 cup rice (i rinse mine) to pan and stir to thoroughly coat with oil. Add 1 cup water, 1 can of coconut milk, 1 tsp salt, 1 tsp honey, and stir until fully incorporated. Increase heat to high and cover pan w/ lid. Once rice comes to a boil (this happens fast so stay close!) remove lid, stir rice thoroughly, replace lid and decrease heat to low. Set a timer for 10 minutes. After 10 minutes elapses, remove pan from burner and set another timer for 15 minutes. Leave the lid on and don't peek! After timer goes off, fluff rice and enjoy. Topped with tomato-less corn salsa and chipotle hot sauce. #feastonlife #inmybowl

#TJsPizzaContest Ingredients: Trader Joe's Pizza Crust Frozen Mashed Potatoes Soy Chorizo Corn and Chile Tomato-less Salsa Finely Shredded Mexican Style Cheese Blend Small red onion, sliced Cilantro, chopped 1 cup water 1 tsp salt 1 tsp sugar 1. Preheat oven to 425. Prepare one piece of TJ's Pizza Crust according to package instructions. (I used the conventional oven method.) Set to the side until it's time to add the toppings. 2. Thinly slice small red onion and add to a bowl with 1 cup water, 1 tsp salt, and 1 tsp sugar. Stir until salt + sugar are dissolved and set to the side until it's time to top the crust. 3. Prepare 2 servings of the Frozen Mashed Potatoes according to the package instructions. Set aside until it's time to top the crust. 4. Prepare approximately half the package of Soy Chorizo according to the package instructions. Set aside until it's time to top the crust. 5. Time for topping! Spread TJ's Pizza Crust with 2 servings of prepared Mashed Potatoes. 6. Top the Mashed Potatoes with approximately 3 tbsp Finely Shredded Mexican Style Cheese Blend, dispersing evenly. 7. Next, evenly top mashed potatoes/cheese with the prepared Soy Chorizo and approximately 2 tbsp each Corn and Chile Tomato-less Salsa + sliced red onion. Be sure to drain both the corn salsa and red onion with a slotted spoon to remove excess moisture prior to topping. 8. Bake for 4-6 minutes at 425F on the center rack. Move pizza to the top rack and bake an additional 1-2 minutes to brown the top. Remove from oven. 9. Evenly top pizza with approximately 1 tbsp chopped cilantro after the bake. 10. Let cool for 2-3 minutes, slice, and enjoy.

When lefftovers become a salad: Two posts back I made a delightful plate of food that included the spiced chickpeas, beef, and sizzled dolmas that I used to top this salad. Peep that post for details. This is the third meal I've made using the leftover ingredients from that post, and I still have one serving of meat and dolmas left to play with tomorrow. Cooking some stuff once and eating multiple meals from it is kind of my thing. It also lowers the bill at @traderjoes each week. I made a quick dressing using 2 tbsp each hummus, greek yogurt, and olive oil. I added some cracked black pepper and a squeeze of lemon to finish it off. Chopped romaine + cucumber + goat cheese + soaked golden raisins to round it out. Salad is my family. #feastonlife

Make bao buns according to package instructions. The frozen potstickers would be a nice substitute here. Cook bagged cabbage in 1-2tbsp sesame oil on medium heat until wilted, about 5 minutes. Add edamame package, 2 tbsp each rice wine vinegar + soy sauce, 1-2 tsp each hot honey + sriracha, and cook for another 5 mins or so, stirring frequently. Remove from heat and stir in 2tbsp chopped cilantro. Green onion would also work. Or both. Whisk 2 eggs vigorously with 1 tbsp of water + 1 tsp Worcestershire sauce. Fish sauce would also work. I did a very lazy soft scramble and let the edges brown, probably 7 minutes total cook time. Top with sesame seeds and a lil drizzle of soy sauce. Vegetable mixture makes three very nice portions. An Ugly Brunch Burger It's a shame this doesn't photograph well because it's next level on flavor. This won't secure the W but is 101% worth a recreation. TJ's Traditional Carnitas TJ's Pastured Raised Eggs TJ's Brioche French Toast TJ's Salsa Verde TJ's Vegan Mayo Spread & Dressing TJ's Spicy Honey Sauce TJ's Unsalted Butter Quarters Notes: You must cook the refrigerated carnitas ahead of time, shred them, & leave in the fridge a few hours to allow the fat to cool/solidify. This fat acts like a glue and keeps everything held together to make the carnitas into a burger creation. I used vegan mayo but regular mayo works here. The TJ's Brioche French Toast comes in a package of four, using two pieces per burger. The carnitas will make four patties. Adjust quantities purchased to meet your desired serving size needs. 1. Cook TJ's Brioche French Toast according to package instructions. 2. Melt 3-4 tbsp of butter w/ 1-2 tsp TJ's Spicy Honey Sauce & whisk together. You can adjust ratios to meet your flavor preferences. You will cook the carnitas patties + the fried egg in this. 3. Mix equal parts TJ's Mayo Spread w/ TJ's Salsa Verde. I used about a tbsp of each per patty. Set aside until burger building time. 4. Cook TJ's Carnitas according to package instructions. Shred and put into the fridge as noted above to allow to cool and for the fat to solidify. 5. Once cooled, form contents into four tightly packed balls. (They should hold together so easily from the fat content I have excessively talked about.) Gently smash them down to create a patty shape. If any pieces start to separate from "the hive" once smashed, gently reform the patty. Keep it tight. 6. Cook each patty on medium heat in the butter mixture, about 4 minutes per side. The carnitas are already cooked (blessings) so just aim to create a crust on the outside. 7. Fry an egg in the honey/butter mixture to desired doneness. 8. Build: Grab 2 pieces of brioche. Spread mayo/salsa mixture on bottom piece. Put crispy carnitas patty on next. Top patty w/ the fried egg + second piece of toast. 9. Grab many napkins. Take your first bite. #TJsBurgerContest A Carbohydrate Forward Burger Wrapped in Lettuce 1 package TJ's Organic Ground Beef 1 package TJ's Mediterranean Style Hummus TJ's 5 Cheese Spiral TJ's Fully Cooked Falafel TJ's Red Pepper Spread with Eggplant & Garlic TJ's Tzatziki TJ's Green Lettuce 4 tbsp TJ's Salted Butter Quarters, cubed 1/4 tsp TJ's Rainbow Peppercorns, ground Note: the 5 Cheese Spiral, Fully Cooked Falafel, and burger patties all bake in the oven at 375F. I personally cooked the 5 Cheese Spiral and burger patties at the same time for 25 minutes (undisturbed) in the oven, and used my air fryer for the falafel. You could cook all three components in the oven, but I would cook the falafel ahead of time, perhaps while preparing the patties, so the oven is hot, undisturbed, and not overcrowded. The falafel can be kept in a warmer while the Spiral and patties cook. This recipe will make 6 burger patties, but I cut the 5 Cheese Spiral into quarters, so you will have two leftover patties. (And leftover hummus, tzatziki, and red pepper spread. Suggestion: eat leftovers together!) 1. Preheat oven to 375F. 2. Combine entire package of beef with 1/2 cup of Mediterranean hummus, Rainbow Peppercorns, and cubed butter. Be careful not to overwork the mixture! 3. Once thoroughly combined, form six round balls and place on a lined baking sheet. (Think of slider sized patties!) Gently indent the top of the formed balls with your thumb. Bake for 25-30 minutes, on top rack, until a nice crust forms. 4. Prepare the 5 Cheese Spiral and Fully Cooked Falafel according to package directions. 5. Let the 5 Cheese Spiral cool and then carefully cut into quarters. A serrated knife is best here. 6. Spread quartered pieces of the spiral with a generous portion of Red Pepper Spread. 7. Now we build! Make sure your lettuce is big enough to fold completely around the filling. Maybe double wrap it. I used 3 falafel per lettuce wrap, breaking each one into halves and stuffing into the wrap layered w/ Tzatziki. You need to have a burrito mindset when building this. Once you pick this up, you cannot put it back down. Stay committed. This is certifiably messy. Have napkins on standby.

Chicken Tikka Masala Burritos: Serves 2. Cook frozen entree and two portions of frozen peas according to package directions. Stir rice and chicken tikka masla sauce together once cooked. Spread a tortilla with mango ginger chutney and half of the stirred entree filling. Top with one portion of frozen peas and chopped romaine lettuce. TJs list: coffee-flavored boba non-dairy ice cream. Sadly still hot in TX (c’mon fall!) so I’m thankful for this cold treat. // Coffee ice cream is my favorite, and my body is happier without dairy most of the time. Texture people, this may be where you opt out: Chewy tapioca balls can be polarizing but I’m team boba all the way. // I’m not a fan of coconut flavor and even though this is made with coconut milk, thankfully the coffee flavor wins out. // This product had supply chain issues all summer and they were on a max of one to purchase or totally gone. But they have finally been in stock the last few times I’ve shopped so grab while you can!

TJs list: THE best way to cook cauliflower gnocchi! // I love these gnocchi, but refuse the package directions. Once you roast them in the oven you will never bother with stovetop again. // Spread the frozen gnocchi on a parchment-lined cookie sheet, drizzle or spray with oil, sprinkle salt and garlic powder. Toss and roast at 375-400 til the outside edges are light brown and crispy and the insides are still soft and pillowy. // I often use convection mode for an even cook, but it’s fine on regular ‘bake’ as well- just make sure to check and toss once they are getting browned (earlier and they will be too soft and will mush rather than toss). I’ve heard these do great in an air fryer, but I have yet to justify adding that appliance to my house. // I serve these as a side dish, in place of pasta with meat sauce and Parmesan, or mixed with roasted veggies, goat cheese, and a drizzle of hot sauce….endless possibilities. But these are always in my freezer ready to rock and roll.

These gluten-free items are enjoyed by the gluten-lovers in my family as well. // Pancake mix: so good that each fall I buy 5-6 boxes to stretch til the next summer. I serve with chopped walnuts, sliced banana, butter, and syrup. // Pumpkin bagels: cut each half into quarters and make French toast nuggets in a dipping size (standard French toast- dip in a mixture of egg, milk, and vanilla). These are great, but if you’re looking to toast a pumpkin bagel with cream cheese then I do think the regular version has better texture than the GF. // Muffin mix: we add chocolate chips and use fun seasonal muffin papers for good fall feels 🍁 // Gluten free baked goods can be spongy, but these all hit a great texture when prepared right. Go forth and pumpkin it up 🎃

I’m not a big caffeine drinker but when I need a boost, this is a go-to. // The chai mix prepared to package directions uses 1/4 of the bottle (4oz) with two parts milk of choice- which is tasty, but sometimes a bit sweet for me. Mind you, I don’t have much of a sweet tooth so you may add more chai to your taste, as this combo below is still bitter. Or stick with the chai package directions and it’s a great tea latte no extra caffeine! // Stretch the bottle further by adding a heavy splash (approx 2oz or less) with espresso and a cup of unsweetened almond milk to make a ‘dirty chai’. Warm the milk and chai mix in the microwave or on the stovetop first, then I brew the @nespresso pod right in. This pizza has a very simple flavor profile but is excellent! I added cracked black pepper after the bake and naturally served it as an appetizer to another pizza 😂 I've seen where other people have cooked this pizza and it "ballooned" in the oven but i encountered no such problem. I cooked mine on a pizza stone that I preheated in my oven for about 15 minutes (for even surface cooking) so that might be the secret. #feastonlife #frozenpizza #deepfriedpizza #pizzaandchill #onmyplate

Wild rice, roasted asparagus, and @traderjoeslist spatchcocked lemon rosemary chicken. Added fresh garlic, lemon zest, lemon juice, and extra rosemary to the rice to punch up the flavor. Roasted the asparagus in chili oil at 400F with plenty of salt and lemon pepper. This chicken was super easy to bake in the oven and made 3 huge meals. Cook veggie masala burgers/veggies of choice at 400F for about 20-25 minutes, flipping burgers at the halfway point. I seasoned the veggies with curry powder, salt, and pepper. Serve over rice (cauliflower rice also tastes fab here!) and top with mango ginger chutney. Golden smoothie: makes six 12 ounce mason jar sized servings. Cook chimichurri rice according to package instructions. I added frozen kale + peas w/a little extra salt & pepper for extra seasoning. I added red beans for protein. Cooked them in a sauce pan with a little ghee, 1/2 tsp each ground ginger + smoked paprika, salt, and pepper. Pan fried the @traderjoeslist frozen Argentinian shrimp in ghee, fresh garlic, and smoked paprika on medium heat for about 10 minutes. Slathered a squishy brioche bun in tartar sauce and stuffed it with chopped arugula/romaine, and cooked shrimp. This shrimp tastes very lobster-like to me, so this is my version of a lobster roll. Cook chimichurri rice according to package directions. Simmer can of black beans in a few tbsp water + salted ghee while rice cooks. Top rice with beans, zhoug sauce, and fresh cilantro. The Japanese style fried rice from TJ's is a little high in sodium but if you add a bag of stir fry veggies to stretch the serving size, it helps lessen the load! I added a sesame oil fried egg and an excess of sesame seeds! Cook stir fry veggies and rice together on medium high heat in a large pan until heated through, about 12 minutes. Peruvian Style Chimichurri Rice is one of my all time favorite @traderjoes products. Multiple bags are always in my freezer and I immediately head to Joe's to restock once I've used my last bag! This is the third and final meal from one package of @traderjoes harissa chicken thighs 💯 Roast veggies of choice (i used winter squash and red onion) + chicken thighs at 400F for 25ish minutes. I added extra spices but the marinade brings plenty of flavor by itself! Top with diced cucumbers, tomatoes, crumbled feta, fresh herbs, and yogurt. Harissa flavored chicken thighs: preheat oven to 400F. Dice veggies of choice (I used winter squash and red onion here) and drizzle with quality olive oil + 1-2 tbsp spices that compliment the harissa marinade. (Such as cumin, paprika, coriander, caraway, garlic, etc.) I roasted the chicken thighs and veggies together on the same sheet pan for about 25 minutes. I served over white rice but couscous would be great here. Topped with yogurt, dill, cilantro, and a squeeze of lemon. #feastonlife #inmybowl #harissachicken

One of my favorites! I don't buy a great deal of beverages as I prefer to drink water (or beer lol) but i like having these around to enjoy throughout the work week as a means to limit my alcohol consumption. Another couscous recipe: Rinse and finger shred jackfruit. Cook mirepoix (onion, celery, carrot) in quality oil on medium heat until softened. Add shredded jackfruit, 1/4 tsp of chicken-less seasoning, 1 tbsp fresh minced garlic & 1 tsp fresh ginger, cooking about 5 minutes more. Add 4 cups vegetable broth + 1/2 tsp each dried thyme, rosemary, and turmeric. Bring to a boil, stir in a box of couscous, cover with lid, and remove from heat. Let it sit 20 minutes. Fluff w/ fork and enjoy. Add frozen peas during the boiling stage for extra health points. Great as an actual chicken soup base or stuffed into pot pie.

I've been holding this cookbook hostage from the library for half a year and I guess my boyfriend noticed because he bought me my own copy for xmas 😂 I used @traderjoes golden raisins instead of cherries, pecans instead of chesnuts/almonds, and just a sprinkle of coconut sugar on the onions rather than the suggested brown sugar. I prefer the chocolate Brooklyn Babka over this cinnamon version but would still rate it a 7/10. The overall flavor is a bit flat for me, tastes like cinnamon bread and nothing more. Preheat oven to 425F. Toss frozen broccoli and cauliflower gnocchi in plenty of olive oil, dried basil, parsley, thyme, and oregano. Bake on a sheet pan for about 25 minutes. These were a total flop for me 😭 I foolishly bought two packages thinking they'd be amazing so now I'll have to give them away and hope someone else will enjoy what i didn't. The filling is not a filling- it was on the outside of the cookie or not present at all. (Swipe for pictures!) The cinnamon flavor was odd to me, reminiscent of Big Red gum, which is fine for gum but bad for cinnamon bun cookies. I give these a 4/10. There are too many amazing products in store right now to waste your sugar on this product. Have you ever tried Cincinnati style chili?! It seems like people either love or hate it (with no room for the inbetween) but as someone who was born and breaded in Cincy, I love it! Cincinnati chili is typically served over plain spaghetti with shredded cheddar cheese + kidney beans + diced onions, OR on a hot dog bun with mustard, diced onion, cheddar, and of course- a hot dog. I used @traderjoes shredded unexpected cheddar to replace the typical aged cheddar for a hot dog/coney bar last night and it was a big hit! I love that TJ's shredded this cheese for us because the block cheese version tends to crumble rather than slice when you cut into it. I hope this product sticks around because I really enjoyed the convenience of it. Let me know how you feel about Cincinnati chili if you've ever tried it 😋
