09/05/2024 Really busy day today, hopefully things can start to calm down now 🫣. This morning we went to hartbeeps, I was really disappointed with this weeks class. The usual teacher wasn’t there, and the class finished 15 minutes early… we then went to meet a friend for brunch which was really nice, been a while since we’ve had a catch up. Worked today, and also did a food shop. Finally stopped at 9:30 tonight 😅. Dexter is learning his farm animals, he can woof, moo and quack now 🤣. He is also good with raaa. Hit SAVE for a tasty mid week 📌📌 𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦 500g chicken mince 1 bulb of garlic 1 tbsp dried parsley 1 tbsp fresh chopped mint 1 egg 2 tbsp breadcrumbs 1/2 tsp oregano 500g rice 200g feta cheese 4 tbsp lemon juice 1/2 red onion 1/2 red onion 125g tomatoes 1/2 red pepper 1 tsp garlic powder 100ml natural yoghurt 200ml chicken stock 𝗠𝗘𝗧𝗛𝗢𝗗 🇬🇷 Preheat the oven to 200 degrees. 🇬🇷 Add the chicken mince to a bowl with 1/2 a grated onion, parsley, mint, 2 tablespoons lemon juice, breadcrumbs, egg and garlic powder and combine with a spoon. 🇬🇷 Wet your hands so the mixture doesn’t stick and shape the mixture into 10-12 kofta shapes and set aside. 🇬🇷 Using a knife, remove a little feta cheese for the end then place the rest of the block into a large baking dish, add the tomatoes, peppers and 1/2 sliced onion then drizzle with olive oil. 🇬🇷 Slice the end of the bulb of garlic, drizzle a little oil inside and wrap in foil. Place the garlic in the dish and put the dish in the oven for 30 mins. 🇬🇷 Add the rice to a large pan of boiling water and cook for 20 minutes until soft. Heat up a little oil in a frying pan, place the koftas in and fry on a medium heat on both sides for 8 minutes until golden and crispy. 🇬🇷 Remove the baking dish from the oven, remove the foil from the garlic and squeeze most of the soft, roasted garlic into the feta. 🇬🇷 Add 2 tablespoons of lemon juice, 1 tablespoon of yoghurt, 200ml of chicken stock and mix everything together. Vanochtend ging Tycho al vroeg naar de camping. Wij zijn toen planten gaan halen en naar kennissen voor pioenrozen helaas niet voor mij zelf Tycho kan die helaas niet altijd even goed verdragen🙈 daarna alles in de tuin gezet, even bosje afgegeven op de camping en bij mijn schoonmoeder, daarna even naar de hemelvaartsmarkt hier in het dorp geweest met mijn schoonmoeder en toen moest er een halve kip mee hij rook zo lekker🤤 verder de rest van de dag in de tuin gerommeld. KFC fakeaway!!!! Chicken coating is 1X small bag of chilli Doritos (split between 2 of us was 3.5 syns for my portion) and chicken seasoning. To coat it dip the chicken breast in beaten egg and roll in the crisp mixture! What I eat in a week as a vegetarian So I missed a few weeks of weekly roundup 🤦🏻‍♀️ but here are some goodies: 1&2. Impossible burger and strawberry fields cocktail from @tommysbrewingcompany 3. My Cinco de mayo nachos cause I never need an excuse for Mexican food 4. Rice and veggies (from my MIL) with veg fish in a katsu curry sauce 5. Bagging up my spearmint tea from @allmyteashop *Spearmint tea has proven benefits for alleviating some PCOS symptoms. This particular one is quite literally the freshest and best I've ever had 6. Mochi from @dpcakery one of my fav things in this world 7. Sauteed mushrooms and zucchini 8. Garlic parmesan toast, simple but let's be honest; perfect! 9. Battered oyster mushrooms, roasted broccoli and baked potato * I used my air fryer for the oyster mushrooms for the first time and honestly they came out great, I'm never deep frying them again 10. Food today ✨I put my back out lifting the baby first thing so not many steps 😭 but on track food wise - 1560kcal Breakfast - white toast (🫢), one with jam, and easy peelers Lunch - jacket spud with cheese and coleslaw, and leftover salady bits from yesterday. Finely grating the cheese makes it go a lot further!! END OF BULK: 95.3KG 🤝 So I said a few weeks back that I’m going to start documenting what I do when starting my cut ✂️ The time has come 😫 Finishing the gaining phase at 95.3kg.
