Today's the day! Here's how to make sure your leftovers are safe for you to enjoy later! - Refrigerate leftovers at 40°F or colder within 2 hours of cooking to prevent food poisoning. Refrigerate leftovers that have been exposed to temperatures higher than 90°F, like in a hot car, within 1 hour. - If you are refrigerating a big cut of meat, such as a turkey or roast, cut it into smaller pieces so they cool quickly. You do not need to wait until food is cool to store it in the refrigerator or freezer. - Eat cooked turkey and dishes made with it, such as soup or a casserole, within 3 to 4 days. Did you know that a pink color in your cooked turkey doesn't mean it's undercooked? As long as your turkey has reached a safe temperature of 165ºF (when measured with a food thermometer using internal temperatures) the pink in the meat is from hemoglobin in the tissues which can form a heat stable color according to the USDA and FSIS. The pink can also occur in turkeys that were smoked and grilled! Tomorrow it might be time to start thawing your turkey! The USDA recommends three ways to thaw turkeys for your holiday meals: in the refrigerator, in cold water and in the microwave. Turkeys should NEVER be defrosted on a counter. It's best to plan ahead for a slow, safe thawing in the refrigerator. The general rule is to allow about 1 day for every 4-5 lbs of turkey to thaw when using the refrigerator method. This means if you have a 20-24 lb turkey you're going to want to place that in your refrigerator on November 19th! Are you taking some stress off your holidays and getting a ready prepared turkey dinner?  Here are some tips to make sure your food and family is kept safe from food borne illnesses. 1. If you’re planning on eating your meal within two hours of picking it up, keep it at 140ºF or higher. 2.If you’re going to be holding your turkey for more than 2 hours, remove all stuffing from the turkey cavity, divide the turkey into smaller pieces and refrigerate everything in separate, shallow containers. When you reheat your meal make sure to heat it to 165 °F. 3. If cooked and refrigerated, keep cold food cold. Refrigerate immediately upon arrival at home (always within 2 hours). Serve the meal within 2 days. 4. On cooked frozen turkey, look for the USDA inspection seal. It tells that the turkey was prepared in a USDA inspected plant. Read and follow package directions for thawing, reheating and storing. 5. If there are no directions on the label, thaw the wrapped cooked frozen turkey on a tray in the refrigerator. The thawed turkey may be eaten cold. To eat it hot, slice breast meat. Legs and wings may be left whole.
