"Make a moment for cutting AND for serving the cake" - Ways to avoid your wedding cake going to waste If you’re having a cake then you’ll probably be making a moment for the ceremonial cutting. Once that’s done, what happens next? In my experience at weddings I have been to as a guest, it gets cut up, put in a corner and most guests don’t even know it’s there. I’d recommend making a moment for serving the cake as well as the ceremonial cutting. How about cake and cocktail time, or having the venue staff or caterers bring the cake round on platters. That means your guests will actually know it’s been served and it will get eaten! You might be thinking, well this is a lot to take in, just for planning the cake. Agreed. Weddings do take a lot of planning, but I’m giving you this advice from personal experiences I have had along with speaking to other in the industry. If a wedding cake is the biggest and most extravagant cake you’re ever going to have, make sure it gets eaten. That’s what it’s for at the end of the day. And while wedding cakes are made to serve a certain number of guests a wedding is usually a day that involves a certain amount of overindulgence. And why not?! Designing the Cake and Costing Following on from meeting potential clients, I create mood boards taken from a couple’s inspiration for the cake and create sketches of initial wedding cake ideas with costing options for each. These are then sent over to couples as an initial wedding cake proposal so that they can choose their favourite design which I then tweak until it’s exactly as they want it. Then, I create a final costing for the cake design based on all the details involved in making it and time it will take to create. This is then sent over to the couple as a final wedding cake proposal for them to agree before a deposit payment is made. Tasting and Design Consultation Once a date has been arranged, I get to meet potential clients for a tasting and design consultation. It’s so fun discussing the details of a couple’s big day and looking at all their inspiration and ideas, venue, florist, bridesmaids dresses or stationery. At our meeting we put all these ideas into a rough sketch and the couple taste 4 out of my menu of cake flavours and choose their favourites. So, how long does it take to make a wedding cake? This is a question I get asked a lot by clients, fellow wedding suppliers, family and friends, and like a lot of questions I get asked about my bespoke wedding cakes, it’s not a straightforward one to answer. Hmmm, where shall I start? How long is a piece of string? We can base it on Malarkey Cakes 3 tier average-sized wedding cake with a standard amount of decoration and time devoted to it. This is tricky though as every cake I make is completely bespoke. I also pride myself on the fact that I offer a wedding cake service which provides my couples with so much more than just a wedding cake. My service includes a tasting session where I share my years of experience and guide my couples on things to consider for their wedding- not just about cakes. I also design all the wedding cakes I create from inspiration provided by my clients, so no copying other cake makers designs here. THE MOST EXPENSIVE CAKE EVER WASN’T EVEN A WEDDING CAKE! The most expensive wedding cake ever commissioned cost $30 million! The cake was made by Buddy Valastro (better known as Cake Boss from the famed TLC cake show) at the request of NYC socialite Devorah Rose for her diamond gala event. According to reports, $30 million worth of jewels — including sapphires, emeralds, rubies and diamonds — adorned the cake. So, not really the cost of the wedding cake as much as just forking out $30 million on jewellery. THE TRADITIONAL TIERED CAKE STYLE WAS FIRST CREATED IN LONDON The tiered wedding cake style we all know was apparently inspired by the unusual spire of St Bride’s church in The City of London. The story goes that, towards the end of the 18th century, an apprentice baker named William Rich who worked at premises at nearby 3 Ludgate Hill, fell in love with his boss’s daughter, Susannah Prichard. In order to impress her (and, presumably, his future father-in-law) Rich decided to make an elaborate cake for his nuptials. What’s great is as a modern wedding couple you can pick or choose which to feature in your big day and which you’d rather replace. IT USED TO BE BRIDAL PIE, NOT CAKE During the 16th century, the “bride’s pie” was served at most weddings. Different from the modern sweet wedding cake, bride pie is savoury. Bride pie is a pie with pastry crust and filled an assortment of oysters, lamb testicles and pine kernels. HOW BIG WILL MY WEDDING CAKE BE? This is generally dictated by how many portions you’d like it to provide. I calculate the sizing of the wedding cakes based on how many portions it’ll need to have plus I consider the tier sizes and heights in relation to the actual design of the cake itself. I specialise in mixing up tier sizes, shapes and heights and have a handy portion calculator I have created that helps me work out how bug each cake tier will need to be. All this will be provided to you with your cake sketches. If you want a super tall cake to really wow your guests but have a smaller party so need fewer portions, I can also add fake tiers, so really, anything is possible with sizing.
