Lemon chicken bowl with hearts of palm pasta ✨ I’m such a fan of @realgoodfoods (I posted about their amazing lasagna a few months ago), and I’m excited to share they’ve recently launched new entree bowls!! I tried this incredible lemon chicken bowl and was blown away. I actually remember trying their bowls a few years ago and not being super impressed. But these were A M A Z I N G! Not wet and mushy like frozen meals normally are (you know what I mean hah), with a delicious taste. 4th of July white chocolate dipped strawberries (high fiber, and low in sugar) ✨ I posted these last year and they deserve a second chance to shine! These are absolutely FANTASTIC, and so fun and festive. These are simply strawberries dipped in @choczero white chocolate chips (which are high fiber and use monkfruit as the sweetener), which are then rolled in @lakanto monkfruit sugar. I use butterfly pea tea to naturally dye the sugar! I promise it’s simple and it’ll be sure to impress. Orange and vanilla bean agua fresca ✨ Agua fresca is such a refreshing drink on a hot summer day. I can’t get enough of it! This agua fresca incorporates orange and vanilla bean with a roselle (also called hibiscus) syrup. It’s the perfect summery, citrus drink! I used roselle because I grew up drinking roselle juice in Thailand. It has a unique tart flavor which combines sooo well with orange and vanilla 🙌🏼 Make this drink at your next social distanced activity, and look reaaaal fancy, or simply make a pitcher for yourself because #youreworthit. Yet more (@califlourfoods ) pizza ✨ I never tire of low-carb pizza alternatives and I’ve tried a lot. In fact, I tried @califlourfoods pizza a couple of years ago (2, perhaps?) and I wasn’t super impressed. Fast forward to now, and I can tell their recipe is much improved! The taste was always there, and now the pizza is much sturdier, and holds ingredients well. I’m absolutely obsessed with their jalapeño flatbreads so their jalapeño pizzas are freaking magical to me. And they’re so fun—you can decorate them, top them however you want 👌🏽 Mine here is a classic in my opinion—good ol’ marinara as a base (pesto is fab too though!), fresh mozzarella, sliced bell pepper, prosciutto and fresh basil. Cali’flour lasagna✨ When I saw that @califlour offered a lasagna made of CAULIFLOWER, I couldn’t believe my eyes! I obviously had to try it ASAP as I was intrigued. Like anyone, I love a regular lasagna but I’m always happy to find a lower carb alternative of a comforting meal, that’s normally higher in carbs. I’m happy to report back that it’s delicious and full of flavor! It’s also high in protein which makes it a satisfying meal that keeps you full. 😋 Oh, and yes, this is fresh picked basil straight from my little garden!!! 🤗 Now, while this is a low carb lasagna, it is higher in fat. This makes it the perfect meal for my keto friends! For all my other friends, just be aware that the fat content is a little higher. Which, you know, makes sense for a traditionally higher fat, cheesy meal. Throw it in the microwave, pair it with a soup or a salad, for an easy and cheesy meal. What more could you ask for?! Roasted tomato basil soup ✨ Have you tried my delicious roasted tomato basil soup yet?? It was one of my blog’s original recipes (courtesy of my cutie husband) and an absolute classic. Meatball “pizza” flatbread ✨ If you’ve watched my stories this week, you’ll have seen that I fell in love with @califlourfoods jalapeño flatbread! It tastes SO good, with a spicy kick, is surprisngly filling, and is only 2g net carbs. It’s a win-win to me! My favorite way to enjoy it has been to make a “pizza” topped with my homemade meatballs. You’ll see that the whole process is super simple—you literally just dollop on some marinara, add mozzarella cheese, meatballs and that’s it. It’s Carba Nada time✨ If you’ve followed me for more than a month, you’ll know that I’m obsessed with @aldentepastaco’s “Carba Nada” fettucine pasta (yes, it’s an hilarious name)! It’s lower in carbs than most pastas on the market and has 7g of fiber. It’s one of the only lower carb versions of pasta that I’ve had that actually tastes like “real” pasta. I seriously eat it once a week or so, and this is my fave way to enjoy it: with some marinara sauce and homemade meatballs! I’ll be posting my homemade meatballs recipe soon—it’s a recipe my husband created years ago which I’ve since tweaked. I also love eating Carba Nada with pesto as well. Pork “pad gra pao” inspired lettuce cups ✨ For those who don’t know, I’m half-Thai, lived in Thailand for 8-years, and absolutely LOVE Thai food. While I’ve been lucky to find some good Thai restaurants in the US, I do enjoy cooking it myself too, to try and get as authentic a flavor as possible 🥰 Pad gra pao is a classic dish in Thailand which literally means “fried holy Basil.” Since I didn’t actually have Thai Basil on me, that’s why these are only pad gra pao inspired lol. The secret is to create a quick paste made of shallots, garlic and chili. It makes the meat you cook it in taste out of this world! You then make an easy sauce of soy sauce and fish sauce to create a slightly salty and savory flavor. It’s a great way to prepare meat! Serve with lettuce cups and you have an easy, light dinner 😋 Have you ever eaten pad gra pao before?? 🍽

Healthier banana bread ✨ Banana bread has always been a cold weather food for me. There’s something comforting about the smells wafting out of the oven and digging into a fresh, hot slice of it. My healthier banana bread, made with @kodiakcakes chocolate chip mix is consistently one of my most popular recipes—it’s truly delicious! It has protein in it from the Kodiak Cakes mix and a rich and sweet taste from a mixture of maple and date syrup. I’ll be making it this Friday on @goodthingsutah at 10:30am MT. Banza chickpea pizza ✨ You all know I’m a fan of @eatbanza and their fabulous chickpea pasta. I was lucky enough to try out their new chickpea crust PIZZA and it does not disappoint! It doesn’t fall apart when cooked and the texture of the crust itself is really good 😻 Pair a couple of slices with a salad or a soup, and you’ve got yourself a tasty, protein-filled meal! 👌🏽 Have you tried Banza’s new pizza yet? Almond flour zucchini cake ✨ I’m always so impressed by how well zucchini works in sweet recipes. @nodiet.eatright asked me to test her recipe before she shared it and I loved it! The zucchini is a fun way to provide extra veggies, that don’t change the flavor at all, and the cake had a delicious taste. It’s gluten-free which makes it a friendly meal for my gluten-free friends too! The recipe is on @nodiet.eatright‘s instagram. I’ll share it in my stories too. I made a few tweaks—instead of coconut sugar, I used monk fruit, and I used @lilys_sweets caramel chocolate chips. You can also use @choczero syrup if you’re watching your carbs/calories but I opted for regular maple syrup. Tag me if you make this and let me know what some of your fave healthy treats are ☺️

How to actually lose weight ✨ #FableticsPartner While exercise provides many benefits, you can’t use it solely as a tool to rely on for weight loss (but it is a great excuse to buy cute @fabletics workout clothes 😉 #MyFabletics). I recently wrote an article on how to actually lose weight which was reviewed and fact checked by a registered dietitian Bailee Whitworth (@baileew90) of @pryme_nutrition). There’s SO MUCH NOISE out there when it comes to weight loss. Quite frankly, it’s confusing 🤷🏽‍♀️ My article walks you through the maze of diets out there, discusses the science of losing weight (hint hint, your food intake matters), and provides you with some actionable advice on what to do if you want to lose weight. I firmly believe that nutrition is highly personal and that you should work with a registered dietitian. I also understand that not everyone has access to one. Ultimately, you’ve got to experiment and do what works for you. I hope my article demystifies weight loss for you once and for all. Air fried tofu ✨ I’ve been having lots of fun with my air fryer recently and I love how it well it crisps up tofu! Tofu is a fantastic vegan protein that is also low in fat. I’ve found myself slowly eating less and less meat over the years, and tofu has been my protein of choice. I feel like people only dislike tofu because they’ve had it prepared poorly before. The secret to excellent tofu is to dehydrate it first before cooking it! I use something I’ve bought off of Amazon called “That Tofu Thing” (@thattofuthing) and I’ll add it to my Amazon store ASAP. Once you dehydrate your tofu, try the following recipe! 💁🏽‍♀️ RECIPE: 1. Mix 1/2 tbsp of corn starch, 1 tbsp nutritional yeast, 1/2 tsp salt and 1 tsp garlic powder in a small bowl. 2. Add your cubed, dehydrated tofu (i use about 1 cup of tofu) into your bowl and coat well with your mix. 3. Add to your air fryer at 350 degrees Fahrenheit for 15-mins. Don’t forget to check the tofu halfway though and give it a shake. 4. Enjoy!! Do you like tofu? Tell me your fave ways to prepare it ☺️

Matcha lemonade ✨ I cannot get enough of matcha!! I literally have a matcha latte every morning (I always buy my matcha from @thematchahaven) and it makes me super happy. And now I’ve found another way to enjoy it—with lemonade 😂 As you may, or may not know, @swoon came out with a line of sugar-free lemonades recently. I used the pink lemonade to make this matcha lemonade, and I’m seriously obsessed. Find the recipe on my blog (honestlyfitness.com) or google “matcha lemonade honestly fitness.” It’s an elevated lemonade with the same delicious taste and will keep you energized all day long (or at least, all morning long). Pumpkin chocolate peanut butter cups ✨ I’m sure you’ve all heard me rave about my white chocolate peanut butter cups. I haven’t made any in ages and wanted to make a fall inspired version. I melted down the pumpkin chocolates that @choczero sent me, and used their pumpkin pie syrup, to make these delicious pumpkin chocolate peanut butter cups 😻 If you go to HonestlyFitness.com and click on “Recipes,” you’ll find my white chocolate peanut butter cup recipe. You can also get there via the link in my bio. Simply follow that recipe but with milk or dark chocolate instead of white. And right before you add in peanut butter, add in a drizzle of @choczero’s pumpkin pie syrup, and then finish with peanut butter! It’s sooo delicious and a lower carb way to enjoy this decadent mixture of chocolate, pumpkin and peanut butter. It’s also super simple to make 👌🏽 Who can resist chocolate?! Grilled shrimp (no grill needed!) ✨ Condo life means that grilling seafood and meats on a BBQ are out, sadly. This grilled shrimp recipe does a pretty good job of replicating grilled shrimp, in my opinion. This is my classic shrimp recipe and it makes an excellent lean protein option to add into any meal. If you see me eating shrimp, then there’s a 9/10 chance I made it using this method! 😋 I’m a HUGE fan of seasoning and I just don’t have time for food that’s bland or doesn’t taste good 😂 I hope you love this shrimp recipe as much as I do. What’s your fave dish to enjoy shrimp with? RECIPE 1. Preheat your oven to 400 degrees Fahrenheit. 3. Toss your shrimp (I used about 12oz of shrimp) with 1tsp salt, 1tsp garlic or roasted garlic powder, 1tsp Aleppo pepper and 1tbsp olive oil. 4. Grab a baking tray, line it with parchment paper, and evenly spread your shrimp across it. 5. Bake for 15 minutes and turn your shrimp over halfway through. 6. Let the shrimp cool for 3-5 minutes and then enjoy!

Healthy and easy pumpkin soup ✨ It’s pumpkin season and fall is here! But luckily, it’s still warm in Utah 😅 I put a poll out last week asking what recipes you wanted and pumpkin soup was one of them! This is an easy, no blend recipe that really only takes about 10-minutes to cook. I didn’t do this intentionally but this pumpkin soup happens to be dairy-free and vegan making it friendly for my vegan and lactose-intolerant friends. Mediterranean spaghetti squash ✨ I neverrrr make spaghetti squash yet @lowcarbafrica inspired me to make some! It’s not hard to prepare spaghetti squash but is a bit more finicky than opening a package of pasta lol. This meal was inspired by @thekitchn’s recipe where I made a few small changes—I added in cherry tomatoes and used Parmesan instead of feta 👌🏽 This Mediterranean spaghetti squash was such a bright, flavorful and satisfying dish. You can keep it low carb by making it as is, or you can always use half he spaghetti squash and add in some pasta (I’d recommend you use angel hair if you do). It’s perfected paired with a bowl of soup. I personally love ensuring vegetables make up the majority of my plate or bowl 😋 Have you tried spaghetti squash before and are you a fan?

Cheesy pumpkin pasta ✨ Maggie (@onceuponapumpkin) posted this recipe last week and I knew I had to try it! I’d opened up a can of pumpkin purée recently and was looking for all the pumpkin things to make. This recipe was super comforting—I used @eatbanza pasta for a more filling pasta (it’s made out of chickpeas so has more fiber and protein than normal pasta), added shredded chicken, and some sautéed bell pepper and spiralized zucchini because more veggies are always a good idea! Vegetables, especially non-starchy ones such as bell peppers and zucchini, bulk up your meals and help you feel more full and satisfied. Adding more veg to your meals feels it’s a no-brainer and an easy way to improve your health. What pumpkin meals have you all been making?!

Healthy Chicken Tenders ✨ Nostalgia alert!! Whenever I take a bite out of a chicken tender, I’m instantly transported back to my 10-year old self. I originally created this recipe back in 2014 as a way to more healthily satisfy my chicken tender cravings, and decided to tweak it just a little this year. This recipe uses a blend of almond flour and shredded unsweetened coconut to provide a fun and tasty texture. It also features my not so secret blend of seasonings that make these tenders sooo freaking addictive! My next step is to use this same seasoning with tofu and try out baked tofu nuggets 😻 My chicken tenders recipe is on the blog! “Slippery When Wet” cocktail ✨ Last month, @wannagrabhappyhour and I held our second virtual cocktail happy hour! I’ve loved getting to know Megan better AND learning how to make fun, delicious cocktails. Pictured is the “Slippery When Wet” cocktail which incorporates strawberries, lemons, and @bombaysapphireus gin to create a fabulous cocktail. Oh and it has a secret ingredient that you’ll have to figure out by watching @wannagrabhappyhour’s IG live (where she walks you through how to make this cocktail, step by step) 😉 I’m not someone who drinks often but I do enjoy a good cocktail or glass of red wine every now and again. This cocktail is only about 4g net carbs and you can use a sugar alternative like @swoon to keep it even lower cal. Vegan lentil curry ✨ Ever since creating this dish last year, my vegan lentil curry has been a fave of mine. I typically start to crave heartier curries and stews as cold weather approaches, and I figured you are the same. The creaminess comes from the combo of coconut milk and lentils. As such, this dish is also packed with plant protein from the lentils, although you’re free to add in other proteins too (hey, maybe try my seitan in it!) It’s also packed with fiber from all the veggies used which makes it super filling and satisfying. Enjoy with a bowl of rice, cauliflower rice, noodles or whatever else 🍴 I hope I’ve convinced you to give this a try! It’s also simple to make and much of the cooking takes place in one big pot. Make your own seitan ✨ Seitan is a vegan meat made from wheat gluten and is sometimes called “wheat meat.” I created an easy recipe to make your own seitan at home for @shape magazine—it’s surprisingly easy and will save you a ton of money! BIG shoutout to @markofthebeastro for helping with this article👌🏽 Seitan has some seriously impressive nutritional qualities—4oz of seitan contains the same amount of protein as a 4oz steak, yet only 160 calories, and 2g of fat! Classic Honestly Fitness Matcha Latte ✨ I make this matcha latte LITERALLY everyday yet I never thought to share exactly what went into it! I was kindly reminded the other day to share my drink recipes. So I thought I’d start with my classic matcha latte. It’s super easy to make and customizable. I can’t wait to see yours, don’t forget to tag me! HOW TO: 1. Boil water! Add a small amount of your hot water to your mug (2-3tbsp, I eyeball it). 2. Add 1tsp of matcha (I only use matcha from @thematchahaven—be sure to get a matcha without added sugar) and whisk with the hot water. I don’t add any sugar to my matcha, as I like the bold flavor, but you’d add in 1-3tsp of your fave sweetened in this stage. I use a bamboo whisk which are cheap on Amazon. You can also use a normal small whisk or electric handheld frother. 3. Add the rest of your hot water—fill your mug 80% of the way full. 4. Add your choice of milk (I use unsweetened vanilla almond milk or whole milk) and a splash of creamer if you wish (I use @nutpods unsweetened vanilla creamer). 5. Enjoy! Matcha is filled with heath benefits (go to my site and Google “green tea” to see my two part series on green tea benefits) and provides a more gradual caffeine boost. So no jitters haha. I love coffee but I’ll never start my day with it (personal preference). Love my morning matchas! How do you have your matcha?!

Get outside and disconnect ✨ In a time of extreme unknowns, where sadly loneliness and rates of suicide are climbing, it’s more important than ever to disconnect, and do things you truly enjoy. I’m sure you’ve already heard a million times that limiting your social media time is a good thing. I know it’s something I’ve heard and read yet never meaningfully put it into practice. I tried it out a little this weekend and will attempt to fully disconnect this weekend! As much as I love, and find value from, social media and the amazing people here, it’s important to fully experience the world around you. Do you take social media breaks?

Stuffed mushrooms (can be made vegan) ✨ I firmly believe in quality over quantity. I may not share as many new recipes as other talented creators. As someone who doesn’t do this full-time, I simply don’t have the time. But the recipes I do share are guaranteed to be something you’ll love and you can rest assured that I’ve fully vetted them! As such, I really wanted to bring this gem of a recipe back to the surface. These stuffed mushrooms are so simple to make yet their taste will blow you away! All you have to do is bake portobello mushrooms and add the filling. And to make the filling, you just whizz a few items together in a food processor! Low carb quesadilla & simple Asian salad ✨ If you’ve been following my IG stories at all, you’ll have seen that I’ve been OBSESSED with making low carb quesadillas. They’re so simple to make and filling as I use the @missionfoodsus carb balance tortilla which is high fiber (and no, not sponsored!). I simply fill the tortilla with around 1/4 cup of mozzarella, grate a little cheddar cheese, add salt and roast garlic powder (a game changer FYI). Pictured here are some baked shishito peppers and a simple Asian salad. I slice some cucumber, add some red cabbage, and then make a dressing from soy sauce, sesame oil and toasted sesame seeds. Takes me minutes and it’s packed full of flavor and fiber! What’s your fave simple yet healthy meal?!

Lightened up burritos ✨ Unlike my husband, I didn’t grow up with burritos, and don’t view them as a comfort food. Yet every now and again, I’ll have the urge for a filling burrito. I prefer making them at home because then I can choose exactly what goes into them, and turn them into a healthy and satisfying meal. Here’s what goes into my lightened up burritos: * Low carb, high fiber tortillas (I like @missionfoodsus tortillas) * Seasoned meat (I use the turkey recipe from my “Healthy Nachos” recipe) * Cauliflower rice (I like to make mine with jalapeños and bell pepper) * Red cabbage * Guacamole optional (...but always mandatory 😉) If you’re not a burrito fan, you can also use the above mentioned tortillas to make a quesadilla, and enjoy the other ingredients as a burrito bowl! That’s what I’m doing for lunch today 😋 What is your fave burrito filling??

Low carb white chocolate peanut butter cups ✨ I can’t let my fave dessert fade into the background so I’m resharing my mouthwatering white chocolate PB cups! Despite being low in carbs and sugar, they’re full of flavor, and seriously addictive. I make them all the time (and in fact, really need to make another batch soon)! They’re super easy to make yet are also customizable. I use @choczero to keep this treat low in carbs and sugar. They also have milk chocolate chips if white chocolate isn’t your thing. Riced broccoli and cauliflower stir fry ✨ I’m no stranger to cauliflower rice dishes yet I’ve only recently starting cooking with riced broccoli. When you combine riced broccoli and cauliflower, in my opinion it creates a better texture. I meal prepped this for lunch this week (took like 20-mins) and it’s an excellent, versatile vegan base full of fiber which you can customize, and add whatever protein you want to it ☺️ To make it, you’ll need: * head of cauliflower, riced (I use a food processor) * head of broccoli, riced * diced shiitake mushrooms (about 1/2 cup) * one sliced leek * one sliced shallot * two tbsp of soy sauce and 2 tbsp tahini to create a sauce * garlic powder, salt, mural of flavor, turmeric, aleppo pepper, vegetable stock/bouillon (chicken is fine too, just won’t be vegan anymore) Let me know if you make this and enjoy it! Aguachile cocktail ✨ Last Friday, @wannagrabhappyhour hosted an IG live cocktail session and introduced me to my new fave cocktail—aguachile! It’s a delicious and #FFactorapproved cocktail (only 4g net carbs) made with pineapple, lime, cilantro (yes, I was skeptical too but it’s amazing) and tequila! And instead of brown sugar, I used my @swoon simple syrup. If you go to @wannagrabhappyhour’s profile, you can find the step by step on how to make an aguachile in her IGTV. It’s seriously so easy to make! 🤗 I’m all for enjoying a fun drink every now and again! Life is about balance and enjoying the things you enjoy. Summer fruit ✨ I enjoy fruit all year round but there’s something about summer that screams fresh fruit. One of my fave ways to enjoy fruit in the summer is to cut up watermelon, squeeze lime and add chopped mint on top. Here are some of my other fave fruits and how to easily enjoy them as part of a larger snack: * Pineapple chunks in a yogurt parfait bowl * Homemade raspberry and strawberry chia jam on toast or @lashesandlemons’ bagels * A handful of fresh cherries and some nuts * Mango and banana protein smoothie * @Zenbasil pudding made with fresh coconut water and coconut flesh What’s your fave summer fruit??

Healthy nachos!! ✨ Ahh, I’m so very excited to be sharing this meal with you—recipe is on my blog! Now, I can appreciate restaurant nachos as they are delicious, but I don’t love how lethargic and meh they make me feel afterwards. My nacho recipe is a lightened up version of this classic meal and features high fiber tortillas (keeps you fuller for longer!), ground turkey (with a secret ingredient that ensures they aren’t dry as the Sahara), and a mix of mozzarella and cheddar cheese 🧀 I’ve tried to nail lightened up nachos so many times but I could never get the tortilla chips right. I’m thrilled to have FINALLY figured out a baked tortilla chip recipe that leads to a perfect crisp. I know you’ll love these nachos and can’t wait to see you make them. Vegan salad with miso tahini lime dressing ✨ As I’m sure you’ve noticed, I’ve been eating a lot of salad this past week! I’m not normally one to eat a salad every single day but this miso tahini lime dressing is a game changer (based off of @fuel_my_smile.dds’ recipe). It’s so savory yet salty, creating an amazing umami flavor. Miso and tahini are both incredible healthful foods and taste amazing when mixed together. My miso tahini salad dressing recipe is in the next slide 👌🏽 To make this salad fully vegan, I topped this salad with a @meatlessfarm burger patty. Next time I might use half the patty as they’re suuuper filling. You can add any other protein options like shrimp, chicken, tofu, etc. What I love about this salad is that it’s totally customizable! I like starting with a shredded Brussels sprouts and mixed greens base and then I build off of that. My other go tos are beans (@badabeansnacks brad beans, @bienasnacks chickpeas, edamame, etc), mint, and cucumber 😋 Are you a salad person? If not, I challenge you to try this salad!

Chaffles aka cheesy waffles ✨ . While I’m not following Keto, I can appreciate a tasty meal when I see one. A “chaffle” is a cheesy waffle primarily made of eggs and cheese. I created this recipe for @shape magazine (added a link to the article in my Linktree in my bio!) and really enjoyed testing out what would make a chaffle come out just right. Cheesy baked eggplant and zucchini fritters ✨ . An oldie but a goodie! I first shared this recipe a year ago but needed to revive it and bring it to your attention ☺️ These fun critters are the perfect snack or also delicious in a wrap. Sausage pepper cauliflower rice skillet ✨ . I came across @lowcarbafrica after @choczero featured her on their page and I’m so glad they did! She posts tons of delicious, low carb recipes and I decided to meal prep her sausage pepper cauliflower rice skillet for lunch this week. I love making cauliflower rice because it’s packed with fiber and hers is incredible! I used a vegan sausage to turn this into a vegan dish and added in some turmeric in addition to the spices in her recipe. Fave outdoor exercises ✨ #FableticsPartner . Ok, so Utah was freaky cold last weekend but summer is FINALLY HERE. I’m excited for hikes and being able to wear cute activewear like this @fabletics set, being able to wear flip flops again and just being warm in general. I absolutely hate being cold. While quarantine is still fairly limiting, here are some of my fave ways to get some movement whilst being outdoors: * Go hiking—living in Utah, I’m lucky to be just 20-30 minutes away from the mountains. * Go longboarding in the park! Baked cabbage rolls ✨ . Ok so this is just round one, and not the prettiest photo, but I got excited and wanted to share! I LOVE cabbage and thought it would be fun to try and make a Thai inspired cabbage roll. The filling is a mixture of tofu and cauliflower rice with a tasty Thai basil sauce—full of fiber and protein 😻 I had three last night with some miso soup and was beyond stuffed. It was a little watery, and I’d like the flavor to be stronger, so I have some good ideas on how to tweak it next time. High fiber healthy blondies ✨ . Haven’t made nor shared these blondies in a while and I thought it was time to bring them back! These babies are delicious, fluffy and caramel-y. Even my husband, who is SO suspicious of healthy treats (he doesn’t like the aftertaste of stevia, monkfruit or any sweetener lol) is a fan ☺️ And the best part? They’re low carb and high in fiber! My recipe yields approximately 10 servings and each serving is 6g net carb 😋😋 While you still shouldn’t eat the whole loaf lol, I hope this provides you with a fun, satisfying dessert alternative. Let’s talk snacks ✨ . Whether you’re on step one of @F_Factor or just trying to eat healthy, snacks are essential. I’ve experimented with three big meals a day, 3 small meals a day and three snacks, and I’ve comfortably landed on three main meals and one big mid afternoon snack. Having a big mid afternoon snack helps keep me full and satisfied until dinner. If I don’t eat a snack, I start making silly choices come night time hehe. . Here are some of my favorite high-fiber snacks: * @ggfiber crackers with a variety of toppings (pictured is prosciutto, avocado and Greek yogurt—ricotta would be fabulous too) * My almond flour bread with some chocolate PB * GG pizzas * High fiber cereal (like fiber one or @catalinacrunch), almond milk, and berries * Protein shake (I like using the F-Factor 20/20 vanilla protein powder) * Protein bars (think @imbuilt Bar, @f_factor bars,@rawrev (just a reminder that the IMOs in RawRev may mean there are more carbs than indicated but it hasn’t adversely affected me) * My high fiber healthy blondies * Apple with PB * @zenbasil or chia seed pudding * Jerky, small amount of cheddar cheese and some berries . Roasted tomato soup with rosemary almond flour bread ✨ . Mother’s Day is this Sunday and after talking to the lovely @lashesandlemons and @thehealthyaddiction, we wanted to team up and provide you with some inspiration on what to make! Chocolate rose pudding ✨ . I’m absolutely obsessed with floral flavors and with Mother’s Day coming up, I thought I’d make a floral, delicious Mother’s Day treat. Enter this delicious chocolate rose pudding!! The first layer are @zenbasil seeds soaked in rose water and the second is a healthy chocolate pudding layer made with avocado. Yep, avocado! You can buy rosewater or make your own by steeping edible rosebuds in hot water. This is the perfect treat for Mom but is also great for anyone who wants a healthy chocolate treat! Keto, low-carb, gluten-free and vegan friendly too! . RECIPE (makes 2 big servings or 3 small servings and only 4g net carbs!!) * 1-2tbsp @zenbasil or chia seeds * 1/4 cup rosewater * 1 avocado * 4tbsp unsweetened cocoa powder * 4-8tbsp @choczero maple or caramel syrup (or any syrup of choice!)—there’s such a variance because it really depends on how sweet you’d like it * 3tbsp unsweetened vanilla almond milk * 1tsp vanilla extract 1. Grab a mason or weck jar. Let’s start by making your rose basil seed layer. 2. Combine 1/4 cup rosewater with 1-2tbsp basil seeds. Wait 15-20 mins for the basil seeds to fully soak up the rosewater. 3. Now, make your chocolate pudding layer. Simply blend the rest of the ingredients in a food processor. 4. Cooking demo: cauliflower hash ✨ . I teamed up with my favorite local salon @studiomuseslc to make this cooking demo a couple of years ago before IGTV existed. I decided to resurrect this cauliflower hash cooking demo because you all have been asking for more cooking demos and step by steps! Plus, this fun cooking demo includes a bonus salad with my signature caramelized maple shallot dressing 😻😻 . You all know I LOVE this cauliflower hash. It’s so easy to make, tasty, healthy and genuinely filling. I personally like to top mine with a fried egg and lots of cholula hot sauce. Healthy Horchata Pudding ✨ . I made this recipe aaaages ago when I first started my blog and had some fun reshooting it this weekend. This vegan healthy horchata pudding is delicious and a fun dessert to break out in time for Cinco de Mayo. It’s ridiculously easy, healthy, and fills you up. There’s absolutely no need to make it blue lol, I’m just obsessed with using my butterfly pea flowers, and turning everything blue 😂 Also, my original recipe used chia seeds. Healthy Banana Bread w/ Choc Chips ✨ . This recipe consistently gets a high volume of traffic to it on my blog. And I’m not surprised! This is a healthy banana bread made with protein packed @kodiakcakes chocolate chip mix and has less sugar due to a mix of fiber and date syrup. Healthy fudge brownies (GF) ✨ . Fudge brownies are one of those classic desserts that everyone loves. I created this recipe over 6-years ago and it’s still a favorite. I haven’t made them, or posted about them, in sooooo long and felt compelled to inform you about this incredible recipe. This recipe uses almond flour, dates, stevia or erythritol (or any sweetener really), and dark chocolate (I used @lilys_sweets dark chocolate baking chips) in place of regular all purpose flour, sugar, and milk chocolate. I also topped these with a tasty frosting made out of @f_factor vanilla 20/20 protein powder and Greek yogurt, and sprinkled them with edible rose buds (chocolate + rose is THE BEST). F-Factor Cheddar Biscuits ✨ . I bought the unflavored @F_Factor 20/20 protein powder, which arrived today, so I set right to making the F-Factor cheddar biscuits (didn’t have jalapeños to add in sadly). I’ve seen these being made by the F-Factor community and I was SO curious to see if they lived up to the hype 🧐 . Drumroll please....🥁 . Yes they did!!! Wow, they were honestly so spectacular, and lived up to my expectations and more. And shockingly, even my husband liked them! He is extremely vocal in how he doesn’t like healthy substitutes lol but even he didn’t have a bad word to say about these biscuits. And I had to stop him eating the whole batch 😂 I only made two small changes due to ingredient shortages : I used mural of flavor seasoning (you can get it from Penzey’s) and no jalapeños 💫 . What should I try making next with the unflavored powder?! #ffactorapproved

Thai Cashew Chicken with Cauliflower Rice ✨ . Growing up in Thailand, and being half-Thai, it was inevitable that I fell in love with Thai food. Thai cashew chicken is a classic Thai dish that I grew up eating and sharing with my family and friends. I adapted this recipe from one of my fave Thai cookbook authors so that it cuts out any added sugar. And I also serve it with homemade cauliflower rice, which is a wonderful rice substitute, that is low in carbs and high in fiber. Although regular rice is fab too 👌🏽 This dish is super duper easy and I could do it in my sleep! It’s hard not to eat day after day but there’s nothing wrong with that 😻 . Recipe (makes 1 serving): * 1/3 cup chopped sweet onion (not diced, you want fairly thick slices) * 1 green onion, thinly sliced at a diagonal * 1 tbsp cashews * 1 or 2 whole dried chili arbol * 3-4oz chicken breast * 1 tbsp garlic paste or 1 crushed garlic clove * 1 tbsp corn starch * 1.5 tbsp oyster sauce * 1.5 tbsp thin soy sauce (normal soy sauce works too) * 4 tbsp water * 1/2 cup to 1 cup of cauliflower rice (let me know if you want my homemade recipe!) 1. First, chop your sweet onion, green onion, and thinly slice your chicken breast. 2. Place your chicken breast in a bowl, add the corn starch, and ensure the chicken is well covered. 3. Heat a pan up to medium heat and add your cashews and chili arbol. Stir for 30 seconds to 1 minute and then add to an empty bowl. 4. In the same pan, add some olive oil (1 tbsp or so), and then add your chicken. 5. Cook your chicken until there’s no pink and both sides start to brown. Add chicken to the bowl with your cashews and chili arbol. 6. Add another tbsp or olive oil and add chopped onions. Cook for 1-2 minutes. 7. Add your oyster sauce, soy sauce and about 4 tbsp water. 8. After 30-seconds, add back in your chicken, cashews and chili arbol. 9. Cook for another 1-3 minutes as the sauce caramelizes around the ingredients. 10. Serve with cauliflower rice and garnish with green onion. 11. Enjoy!!!

Blue overnight oats ✨ . My husband recently bought butterfly pea flowers which, when strained in liquid, create a gorgeous blue color (or purple if you add acid like lime to them)! And, in theory (I haven’t dug into this much yet), butterfly pea is rich in antioxidants and is good for your skin. I thought it’d be fun to make this layered overnight oats recipe. I’m definitely the type of person who takes great delight in eating beautiful food and this was seriously so easy to make. . To make this, I basically just added some butterfly pea liquid to my usual overnight oats recipe (oats, chia seeds, almond milk and protein powder—I used @f_factor’s 20/20 vanilla protein powder) which I just realized is vegan friendly. I’ll be putting the full recipe on my blog later this week. . How have you been experimenting with food during this pandemic? Any cool tips/dishes you can share in the comment??

Mexican style cauliflower hash ✨ . Most of you know that I’m obsessed with my cauliflower recipe and make it pretty regularly. I had a bell pepper and some jalapeño that I really wanted to use, so I decided to tweak my cauliflower hash slightly, and make a Mexican style version! And omg it was just as delicious, if not more, and this dish is a fantastic way to pack in tons of fresh produce and fiber. Plus, it takes less than 20-minutes and is vegetarian (you can make it vegan if you omit the egg). If you could try just one of my recipes, it would hands down be my cauliflower hash recipe (although I’d love if you tried more hehe). . Tell about me some of your favorite veggie packed dishes!!

Matcha banana bread ✨ . I bought a bunch of bananas last week and thought I might as well use the last ones to finally make @healthywithnedi’s matcha banana bread! I’ve tried a lot of Neda’s recipes and they always turn out soooo good. I feel like quite a few healthy food bloggers skimp in taste but not Neda—you can tell she actually cares about it and won’t sacrifice taste. This matcha banana bread was super easy to make and turned out delicious and moist. I love that it’s packed with fiber and will make a delicious snack over the week. I didn’t have coconut butter or oil so I ended up subbing butter and olive oil for them. I also used my matcha from @thematchahaven, 1tbsp of @upliftfood and @choczero fiber syrup! . What have you guys been baking??

Mood boosting smoothie ✨ . Hi everyone! Long time no talk and I hope you’re all doing well during this unprecedented time. I can imagine you’re all spending a lotttt more time at home and I wanted to share an easy smoothie recipe. It has a special ingredient which some of you may have seen on my IG stories: @upliftfood ! I first learned about @upliftfood from my friend @happyandhealthyolivia and got the chance to try it recently. I love it because it blends well into smoothies, has 5g of plant-based protein, 5g of prebiotic fiber, and probiotics. The prebiotic fiber fuels the probiotics which helps make your gut stronger and can lead to mood benefits long term 🙌🏼 . Here’s the easy peasy recipe: * 1 banana * 1 tbsp @upliftfood * 2 tbsp @f_factor vanilla protein powder * 1 tbsp powdered chocolate PB * 1 cup of unsweetened almond milk Simply blend together and enjoy! . Baked Stuffed Portobello Mushrooms ✨ . Ever since I started making delicious stuffed eggplant, I’ve been eagerly seeing what other veggies I can stuff haha. As you can see, I moved onto portobello mushrooms! Portobello mushrooms are delicious and almost meat-like in texture. They’re very satisfying, low in carbs and have fiber. Win win! I made my stuffing for the mushroom with vegan ricotta (and then used regular Parmesan and mozzarella, lol) but you can use standard ricotta. The stuffing also has spinach which packs in extra fiber! . RECIPE: 1. Preheat your oven to 450 degrees Fahrenheit. 2. Grab 4 medium sized portobello mushrooms. Put them on a baking tray, gill side up, drizzle with olive oil, salt and pepper. Bake for 25-mins. 3. While those are cooking, make your stuffing! Blend 1 cup of spinach, 1/4 cup Parmesan, 1 cup ricotta, 1tsp mural of flavor seasoning or Italian seasoning, 1tsp salt and 2 olives (optional but adds a yummy and salty flavor—anchovies would be good too). 4. Once mushrooms have baked, add a small amount of marinara to each (1tbsp) and then scoop some of your filling on top. Add some mozzarella! 5. Bake for an additional 5-10 minutes or until warmed through. 6. Enjoy!! . When will you try this plant based meal? 😉

Baked eggplant ✨ . This was such a delicious, plant based meal!! I got the idea after a friend had told me she’d made it, so I decided I’d give it a go. To keep it @f_factor approved, I used wheat bran instead of regular breadcrumbs to sprinkle on top and @raoshomemade marinara sauce. Save the photo and have this recipe for easy access. It’s so easy and incredibly filling! You can have it on its own or have some lean protein on the side. . RECIPE: 1. Preheat your oven to 400 degrees Fahrenheit. 2. Cut your eggplant in half lengthwise. Now, use a knife and carefully cut around the inside edges of the eggplant, leaving a small gap from the edge. 3. Scoop out the eggplant flesh with a spoon and chop it into small cubes. Leave aside for now. 4. Rub the eggplant shells with olive oil and lightly sprinkle some salt and pepper. Bake for 25-30 minutes 5. While the shells are baking, chop some garlic and add it to a hot frying pan. 6. After 30-seconds, add your eggplant flesh and cook until soft, 5-10 mins. 7. Add 1/2 cup of Rao’s marinara sauce to the eggplant mixture as well as 1tsp of fresh or dried basil. Cook for 2-4 mins or until warm. 8. Take off the heat and stir in 1/4 to 1/2 cup (up to you) mozzarella and 1/8 cup Parmesan. Feel free to stir in 1-2tbsp if wheatbran at this point or you can wait until the next step to use it. 9. Once the eggplant shells are cooked, carefully distribute your mixture into the shells. Sprinkle about 1-2tbsp of wheatbran and additional basil, or Parmesan, if you wish. 10. Set your oven to high broil and cook for 2-4 mins. 11. Enjoy!! . What’s your fave eggplant recipe?
