In The Andes of Venezuela, people normally start their days with a soup called Pizca Andina, it is a soup made with potato, milk stock, and cilantro. In my version of this dish I like to combine with chicken pieces. The result? A delightful soup to warm your body and start your day. My version of Pizca Andina soup (4 people) Ingredients: • 1 L of chicken or vegetable stock • 500 ml of milk or vegetable milk • 2 medium potatoes (diced) • 2 green onions finely sliced • a small handfull of cilantro finely chopped • 3 cloves of minced garlic • 200 g of fresh cheese diced • salt and pepper taste • 2 tbsp of extra virgin olive oil instructions: - In a large pot at medium-high heat add 2 tbsp of extra virgin olive oil wait 1 min and add all your vegetables to cook it for 5 to 7 minutes to release all the oils and aromas. Then, add the stock and continue cooking until begin to boil, add the milk, salt, pepper, cheese, eggs and cilantro.
