Donderdag met @charlottesfoodweb een avondje genoten bij het nog vrij nieuwe @cafecressamsterdam in Amsterdam-Noord. Het menu verandert er iedere week en bestaat uit gerechten die gemaakt worden met wat de chef op de markt vindt. Blij met compacte kaart (3x voor, 3x hoofd, 3x na) vol toffe combinaties. Ook héél blij met de Franse roots van chef Cyril die het belang van sauzen begrijpt. Sfeer in de zaak is top, mede door maître Jeffrey die daarnaast een toffe wijnkaart heeft samengesteld. Het chef’s menu bestaat uit drie gangen voor 37 euri (!!!). Wij mochten onder meer genieten van: - aardappel-preisoep met goede hitte; - paddestoelbitterballen met geniale mayo van de snackkaart; - geniaal servies; - geleerd dat de Nederlandse naam voor arctic charr beekridder is; - gestoofde lamschouder in knolselderij met zwezerik, orzo en té lekkere jus; - heel fijne dessertwijn; - nagerecht met chili-pastinaak ijs met de juiste mate van pittigheid: je voelt het wel, maar slaat niet door. Tof in balans! Met een wekelijks wisselende kaart met ingrediënten die vers van de Albert Cuyp markt komen kun je hier in principe iedere week weer opnieuw aanschuiven. De dinergerechten zijn ideaal om te delen dus je kunt ook nog meerdere dingen proeven van de kleine kaart als je niet kunt kiezen. Wij schoven aan voor de lunch met keuze uit wisselende broodjes: deze week was dat o.a. makreel en een kazentosti 🤤 PS: Met oud&nieuw nog geen plannen?
