TWO-MINUTE STANDSTILL When you are in the weeds, it can feel as if you need to put your head down and keep moving and hustling to keep up. Counterintuitively, you are better off not doing anything. A busy station under siege messes with your sense of time. (Causing you to believe you have less time than you have.) Double or repeat movements while under time pressure subsequently waste MORE of your time. Drop what you are doing and come to a complete standstill for TWO WHOLE MINUTES. (Yes, you have time..despite what others might say.) Lift your head and study the reality calmly. (Chances are the service is not going as bad as it seems; servers are engaged…guests are happy... After the stoppage, proceed to bring your station under control. Realign yourself back to the pace of service and continue working steadily, one step at a time. #theoristchef
