For everyone who has requested it, here is our chilli recipe. You can adjust vegetables used, I sometimes use celery in place of courgette. Diced aubergine would also work. I should also have said to stir it regularly whilst cooking. Hannah used to have this without the red kidney beans for a free meal, when served with LP rice. It is also delicious as a topping on homemade potato wedges with vegan cheese or in a jacket potato! The fajita seasoning I use is either from Sainsbury’s or Waitrose. It comes in a small glass jar and can be found with herbs and spices- not a sachet that comes with a fajita kit. As we’ve had so many requests, here is the recipe for the muffins Hannah baked this evening. Please note that the chia seeds need counting-we used 1 teaspoon, which on the pack we have, amounts to 1g of protein. We also used Asda sugar free oat milk which amounts to 2g of protein. So the entire batch was 3g of protein so each muffin is 0.25g of protein. Root veg Thai red curry with turmeric rice. This is a favourite in our house at the moment! It cooks in the oven, in one dish so is great as can just be left to cook with little intervention. Count vegetables used as per your guidelines. I used Oatly cream, check the protein content and calculate accordingly. For higher protein, use GF or regular pasta. Alternatively add some white beans into the sauce whilst making. For lower protein, use free vegetables and adjust cream amount to fit your allowance. A new recipe for our #growingupwithpkurecipes series-super tasty root vegetable red Thai curry! Ours totalled 7 exchanges but made 4 portions. Depending on which paste and coconut milk is used, this could be reduced further. It takes a little over an hour but as it’s in the oven it can be left so it’s a great one for busy evenings when other things need to get done! Sharing the recipe for a really delicious curry. You could change the vegetables used, I used these as we had them in. Peas are optional, leave them out to lower protein or add chickpeas instead if you want to increase it. We served ours with basmati rice, you can use low protein rice or serve with 2 ingredient, 5 min flatbreads as naan alternative. I haven’t listed the protein as this is going to vary depending on the vegetables and coconut milk used. Haven’t shared a recipe in a while but this is super simple and delicious! Perfect with pasta, as a sauce for low protein meatballs or as a pizza topping. It takes just 30 mins to get a tasty, totally free meal on the table as the sauce can be enjoyed by all! To adapt this for non-PKU family members, I like to make a side of beans; herby chickpeas or sautéed leek with canellini beans are my favourites. We also like to use high protein lentil pasta. I’ve always made Hannah chocolate and banana loaf cake using the Fate recipe. This is an adaptation of that recipe to make small muffins, ideal for packed lunches and picnics! Blitzing the banana in helped them rise and feel lighter and gave them a nice even flavour! Also great for fruit refusers as the banana is barely visible but you can choose to leave it chunkier if preferred. You could also add chocolate chips or LP chocolate, broken up, into the mixture. ~Baking~ Hannah had food tech at school today and took in low protein ingredients to work with this week! We were not certain if the recipe was going to work as it was one we came up with last night, having looked at some over other LP recipes and standard carrot cake recipes. Hannah wanted me to share this today because the muffins are delicious! Phew! On our guidelines, these muffins are free!
