Had to attempt the famous #adobochocolatechipcookies of course, but was also equally intrigued by the marbled tahini palitaw. As a Filipino from Metro Detroit, incorporating a staple Middle Eastern ingredient in a traditional kakanin was a perfect tribute to growing up in the region and its immigrant cultures. Somewhere in the cookbook Abi mentions being fascinated with the food culture of the American Midwest — well, here's one creation with a definite geographic resonance! My first bake of the holiday season! A matcha twist on the susanspungen Marbled Tahini Cookie recipe (found on @nytcooking) To matcha-fy your sesame cookies, combine a heaping 1 tablespoon of matcha powder and 1 tablespoon of hot water. Divide the dough into thirds. Incorporate only half the tahini into 1/3 of the dough, and the black tahini into another 1/3, following the recipe directions. In the last third of dough, repeat the previous steps with the matcha paste.
