Pandan Chiffon Cake (班兰戚风蛋糕) —————————————————— This is the 20th food for my #foodlovedinsingapore project. The recipe used is from the amazing Dr Leslie from the ieatshootipost blog. He doesn’t have many recipes, but the recipes he does have are super detailed and informative. Pandan chiffon cake is a classic cake to have in Singapore, Malaysian and Indonesia, but strangely it is quite difficult to get really good ones. This is because of a couple of reason. One: the cake is tricky to perfect. It took me many attempt to get everything just right. It needs to be light and fluffy made in a bundt cake tin. Two: is that a lot of places cheat and use pandan extract to get the colour. This means that the cake misses the distinctive pandan taste. To do it properly you need to blend pandan leaves with the coconut cream/milk, but then you need a balance between enough natural pandan colour and the amount of liquid added. In the end, using ieatshootipost post recipe (halving it), I blended together 100ml of coconut cream plus 30ml of water with pandan leaves, strained through a cheese cloth and all of that pandan coconut liquid. #pandan #pandancake #pandanchiffoncake #cake #班兰戚风蛋糕 #班蘭戚風蛋糕 #pandanchiffon

Incomplete prototypes of a pandan and ube layered cake in a cup. This concept is going in the archives and maybe one day I will pull it out again and complete it. The last iteration of the cakes are as follows: Pandan/Ube Coconut Tres Leches, strawberry jam/coconut jam, coconut & cream whip, pandan/ube chiffon, toasted coconuts, coconut sugar lace crisp. The duo were actually pretty close to completion. They were in the last stages of R&D where I was testing shelf life, time impacts on the whipped layer, and stress testing against temperature (I took it to a climbing crag on a 80deg day!). They were actually going to be the special for the Mile High Asian Food Week, however due to a couple of reasons, including not being quite satisfied with the ube version being one, I pivoted to mochi muffins, which in general was a better call! My thoughts overall with these cake in a cup is that the portion size of the cups is very hard to work with. It’s a bit too much cake for one person and its hard to price it attractively. But let me know, how much would you pay for these cake cups?
