Filipino street food is my kind of winter-weather comfort food. Meet another childhood favourite, and the inspiration behind @jollibee’s Banana Langka Pie: Turon (tu-rohn’). Turon, which some consider as the dessert version of lumpia (a meaty Filipino spring roll), is a crispy deep fried roll filled with saba (sa-bah’, aka burro in North America) banana and langka (lang-ka’, or jackfruit). It is sweetened with Demerara sugar that caramelizes during frying. The langka is optional, but it pairs perfectly with banana. I’ve never made turon by myself before this weekend, but I knew how to make them from vivid memories in various kitchens because I liked to tag along, learn, and be of use when I was a kid. I bought the bananas from the Filipino store and it’s interesting how some older kababayan (fellow Filipinos) did not know that burro bananas are the bananas used for turon. The other lady in line, who had a bag of frozen pre-rolled turon, said that she’s always just bought those. Perhaps I am getting old.
