Mì quảng, the turmeric noodles of central Vietnam. The yellow hue comes from turmeric which serves as a natural food dye, hence the name. The broth is typically pork-based, add some shrimp heads for depth (secret sauce tip from @theblogofsalt - thank you Thuy!). Like most Vietnamese noodles, toppings vary based on preference and generally include, pork and shrimps. Unlike other Vietnamese noodles, the broth-to-noodle ratio is typically less than your standard bowl of noodle soup. Garnish with bánh tráng nướng and Vietnamese herbs. Fun fact: The Quảng Nam region has a distinct local accent and dialect. After marriage, my aunt relocated to Đà Nẵng city (part of Quảng Nam region). She picked up the local accent as an adult, and it has stuck with her since. Ấu (water caltrop / bat nut / water chestnut) is an aquatic plant grown in Vietnam’s southern region (Miền Tây). The edible portion (corm) resembles a bat. The corm grows underwater until it matures and floats to the surface, where it is harvested. Inside the dark shell is a white, starchy seed. Củ ấu can be boiled and eaten by itself or used in soupy dishes. Fun fact: It was very hard to find a Vietnamese food starting with letter “â” and I enlisted my dad to help. When we found củ ấu though, it was perfect because I learned there’s a big agricultural industry surrounding this plant, and I’d never even heard about it. Goes to show there’s so much to learn. We debated whether to add a prefix (củ, trái) or leave it alone. As ấu is a more obscure plant, we decided a prefix would help contextualize word. There’s a Vietnamese saying that goes, “Chỉ có ốc đinh là ốc không ăn được.” Đinh is a nail, and đinh ốc (ốc đinh) is a screw because the threads resemble the shell of snails / escargots. So the phrase roughly translates to “A screw is the only thing that cannot be eaten.” Vietnamese people are resourceful, we make do with what we have. Growing up, I tried interesting things ranging from chicken necks, pork brains (you steam it), to jackfruit pits / seeds (you boil it). Most things can be edible if prepared correctly - even if it’s not for everyone. In deciding the dishes to include in the book, I wanted to reflect the sense of adventure in Vietnamese cuisine to share with our children. Such that when they read this page, if they initially recoil, we can help them understand food is different for everyone. And what might not be appetizing for some is a delicacy enjoyed by others. It starts with “a” for atisô (ah-ti-shoh). Artisô (artichokes) were first introduced to Vietnam by the French. Today, they are mostly grown in Đà Lạt, making trà atisô a specialty from this region. Trà atisô (artichoke tea) is an herbal tea made from the entire plant - root, stalk, flower and leaves. The tea, like the plant, is slightly sweet and woody, and boasts a plethora of health benefits. Every week, my mom makes a big pot of trà atisô and drinks it over a few days. Her version is simple: the artichoke is sliced along its length into quarters, then boiled and steeped. Like all Asian moms’ recipes, how long you boil and steep it is undefined. “Until it tastes good to you,” she says. P.S. In contrast to the tropical climate found in most of Vietnam, Đà Lạt is more temperate and mirrors SF Bay Area weather. The city’s architecture was heavily influenced by the French during the colonial period and it remains a picturesque resort city. 𝗔𝗕𝗖 𝗶𝗻 𝗩𝗶𝗲𝘁𝗻𝗮𝗺𝗲𝘀𝗲 (𝗙𝗼𝗼𝗱 𝗘𝗱𝗶𝘁𝗶𝗼𝗻) 𝗻𝗼𝘄 𝗮𝘃𝗮𝗶𝗹𝗮𝗯𝗹𝗲! I didn’t plan on writing an ABC book. Yet, once the idea of showcasing the diversity of Vietnamese cuisine took hold, I had to complete the project. This book seems simple, but there were interesting challenges and decision points I didn’t expect. For example, in choosing the items to represent the Vietnamese alphabet, some letters proved easier than others. Also, due to how our language works (nouns before adjectives), certain foods require qualifiers to correlate with the right letters. In the book, (bánh) ít and (bánh) ú represent “i” and “u” respectively. I find this more fitting than assigning the dishes to “b” and exercised my creative license. Over the next few weeks, I’ll share more selected bts stories or why I chose a particular dish to feature. Stay tuned! My kids don’t speak Vietnamese, but their listening comprehension is getting better. I incorporate “ở đâu rồi” or “đâu rồi” whenever I can - getting ready to leave the house, when they ask me to find something, or when I ask them to clean up their toys. When I first started, I combined “đâu rồi” with “where?” Over time, I dropped “where.” My son (3.5) now knows what bình nước means. My daughter (2) will say “where” when I ask “đâu rồi?” Small wins 😅. My mom used to carry these colorful, hard plastic bags to the market. Slowly, it would fill up with the day’s groceries, anything from vegetables and meat, to rice and snacks. Given our limited refrigerator space, she’d go to the market daily after work. Meals were freshly prepared. She didn’t know how to ride a motorscooter, so she would’ve had to wait for my dad, walk, or call a friend or motor-taxi “xe ôm.” I can’t even imagine the mental load she - like most mothers of her generation - carried.
