Hands down my favorite healthy treat - Protein Peanut Butter Chocolate Oat Cups!😍 You can use any nut butter to make these, here I used peanut butter - I’ve also made these with almond butter butter and cashew butter, both great options! These cups are vegan, gluten-free and dairy-free and SO YUMMY🙏🏻 You gotta try!!!🤗<br /><br />✨Peanut Butter Chocolate Oat Cups (Vegan, Gluten-Free, Dairy-Free)✨<br />1 cup Rolled Oats<br />1 cup Nut Butter (peanut butter is my favorite)<br />1/4 cup Honey or Maple Syrup (use less if you don’t want them sweet)<br />1/2 tsp Vanilla Extract<br />1/4 tsp Sea Salt<br />Optional: 2 scoops protein powder<br /><br />🍫Chocolate Topping🍫<br />1/2 cup Chocolate Chips (my favorite is @hukitchen gems)<br />1 tsp Coconut Oil<br /><br />Directions: Combine all the base ingredients in a bowl and combine. Line a muffin tin with cupcake liners and press 2 tbsp of the mixture into each cup. Place in the freezer while you make your chocolate topping. Combine the chocolate chips with 1 tbsp of nut butter and microwave in 20 second increments until fully melted. Let cool for 10 minutes. Remove the cups from the freezer and begin to pour the chocolate topping into each cup. Once finished, place these in the freezer for 1 hour. To store, keep these in the freezer or fridge!
