Healthy Pad Thai is in my top 5 all-time favorite recipes on my blog. Incrediby flavorful and unique. I like to keep it #vegetarian by using tofu, but you could use chicken, shrimp, pork... whatever! It's a great recipe for packing in some extra veggies, too.
1 2/3 cups is 257 calories l, 7 SP on WW Green, 6 SP on WW Blue, and only 2 SP on WW Purple!! You can beat those stats for the serving size.
Don't be intimidated, thinking you can't make Thai food at home! This isn't an authentic recipe by any means, but I tried to mimic the flavors as closely as possible with ingredients that you can easily find at any grocery store. The results are delicious, healthy #fakeout #takeout at home!
