My new BFF...Sweet Potato greens! Do you know it?
I dislike them raw, but I ate an entire wok-ful of them simply stir fried with garlic & salt...tender stems & all. That was my favorite, but it's also been a nice neutral tasting green in soups & an addition to round out sides of Purple Hulls peas.
This is only my 2nd year growing this vegetable, and I can't believe I've been missing out. Btw, if you're in my area (DFW, TX) when are you harvesting your tubers? I think I pulled mine too early last year in early September.
