Super easy to grow and propagate greens . Sweet potatoes! A cutting this size will root in less than a week and rapidly grow! Sweet potatoes are a member of the Ipomea or morning glory family and not at all related to regular potatoes. Sweet potatoes are sometimes called yams, but yams are another genus Dioscorea, and again not at all related. You can make starts by laying a sweet potato sideways in a planter that gets indirect light. Bury it about 1/2-3/4 in standard potting soil moderately water it and it should start sprouting in about two weeks. Once the shoots get about 6”-8” long break them off stick them in the ground or planter regularly water them and they should take root in about 5 days. The greens grow in sun and partial shade. They taste great and are very nutritious. And because I'm me......did you know you can eat sweet potato greens? Here, I've sautéed them in avocado oil with just some salt and pepper. They're high in vitamin C and B6 and have antimutagenic compounds (reduces the rate of mutation of cancer cells). They're very tasty cooked, but I'm also saving some to use raw in smoothies. Loving the transition to fall. Sweet potatoes will be dug up soon, i don’t have a plan for the bed quite yet and i don’t feel like dealing with the ants that are under all those leaves. The tomatoes are splitting from all the rain, there’s still a few good ones here and there. Cilantro sprouted up on my path between beds, they went to seed in the spring and i still have plenty seeds left! Green beans and greens are coming into their own, so that’s been enjoyable! The African basil is going strong and the bees love it, it’s so sad when the cold kills it off. I may try experimenting with taking cuttings so i can replant in the spring. Fall CSA week 3: this week the bag I grabbed was a farmer's choice share and the colors just made me smile. Sweet peppers, sweet potato greens, okra, garlic, purple basil, and sage. I love my members for a lot of reasons but it makes me so happy that they are such creative eaters. We've had many weeks where people ordered more okra than tomatoes, more gherkins than cucumbers. The heat of the summer is a tough time to try to grow greens like lettuce, spinach, arugula, etc. HOWEVER, sweet potatoes thrive in the summer heat and don’t require lots and lots of water. . Don’t harvest too many leaves at one time so you sweet potatoes will still grow strong and healthy. . Sweet potato greens are highly nutritious. For starters, the leaves are an excellent source of antioxidants and contain high levels of vitamin A and C, as well as riboflavin, thiamin, folic acid, and niacin. Sweet potato vine leaves also provide impressive amounts of fiber, along with calcium, magnesium, manganese, zinc, copper, potassium, and iron. . Servings: 4+ Difficulty: Medium INGREDIENTS: * 500 gram (1.1 lb.) yam/cassava/sweet potato leaves (Indonesian: daun singkong) * 2 tablespoon cooking oil * 5 bay leaves (Indonesian: daun salam), omit if you don& #39;t have these * 1 lemongrass (Indonesian: sereh), chopped into 4 pieces * 750 ml (3 cup) water * 250 ml (1 cup) coconut milk * 1/2 tablespoon salt * 1 teaspoon sugar * 5 Thai lime leaves (Indonesian: daun jeruk), omit if you don’t have these * Spice paste (grind together the following ingredients): * 5 red chilies (Indonesian: cabe merah), I use Fresno, but feel free to use red cayenne, or even red bird-eye chilies if you wish * 8 (120 gram / 4 oz.) shallots (Indonesian: bawang merah) * 2 cloves garlic (Indonesian: bawang putih) * 3 candlenuts (Indonesian: kemiri), or macadamia nuts * 1 inch fresh ginger (Indonesian: jahe) * 1 inch fresh galangal (Indonesian: lengkuas) * 1/2 tablespoon ground coriander (Indonesian: bubuk ketumbar) * 1 teaspoon turmeric powder (Indonesian: bubuk kunyit) DIRECTIONS: 1. Pinch off each leaf and its stem from the main stalk. Pinch off also the portion of the main stalks that are tender. Wash and rinse thoroughly a couple of times and set aside to drain off any excess water before cooking. 2. Heat cooking oil in a wok/deep skillet/pot and fry the spice paste until fragrant, about 3-5 minutes. 3. Add daun salam/Indonesian bay leaves (if using) and lemongrass and cook for another 2 minutes. 4. Toss in the sweet potato leaves and pour water into the skillet. Cook until boiling. Reduce heat and simmer for 15 minutes. 5. Add coconut milk, mix well, and simmer for another 5 minutes. Adjust salt and sugar as needed. 6. Add Thai lime leaves (if using), and stir for 1 minute.
