Great clinical image from @nejm of shiitake flagellate dermatitis. This rash is characterized by red whiplike streaks on the trunk or extremities. It typically occurs within 2 hours to 5 days after handling or eating undercooked or raw shiitake mushrooms.
The polysaccharide component of shiitake mushrooms, called lentinan, is believed to be responsible for this dermatitis. Heat destabilizes lentinan, so the rash is more common after eating undercooked or raw mushrooms.
This rash typically goes away by itself, so treatment is directed at symptoms. It can be alarming, so best to discuss with your dermatologist.
