Vegan Sausage Rolls (Using Carrot and Nuts)
Ingredients:
For the Filling:
- 1 large carrot, grated
- 1 cup mixed nuts (such as walnuts, almonds, and cashews), finely chopped or ground
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce (ensure it's vegan)
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- Salt to taste
- 1 tablespoon olive oil
For the Pastry:
- 1 pack vegan puff pastry (thawed if frozen)
- Plant-based milk for brushing
Instructions:
1. Make the Filling: Heat olive oil in a pan over medium heat. Sauté onion and garlic until softened. Add grated carrot and cook for 2-3 minutes.
2. Add Nuts and Seasonings: Stir in the ground nuts, soy sauce, smoked paprika, thyme, black pepper, and salt. Cook for another 5 minutes, until the mixture is well combined and slightly browned. Let the filling cool down.
3. Preheat Oven: Preheat your oven to 400°F (200°C).
4. Prepare the Pastry: Roll out the vegan puff pastry on a lightly floured surface. Cut it into strips, each about 4 inches wide.
5. Assemble the Rolls: Place a line of the carrot-nut filling along one edge of each pastry strip. Roll the pastry over the filling to enclose it, then cut into desired lengths.
6. Prepare for Baking: Place the sausage rolls on a baking sheet lined with parchment paper. Brush each roll with plant-based milk for a golden finish.
7. Bake: Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
8. Serve: Let the Vegan Sausage Rolls cool for a few minutes before serving. They are perfect as a snack or appetizer.
