Yeasts hard at work 💪🍞 Yeasts are single-celled fungi that help us bake breads or brew alcoholic beverages. During fermentation, yeasts use enzymes to metabolize sugars and starches, in order to create energy and enable reproduction. The byproducts of their fermentation are ethanol, which creates the sweet, doughy aroma, and carbon dioxide, which allows dough to "rise" with the pockets of gas making bread soft and spongy.
