Traditional Polish Pączki (Doughnuts) 🥰 Ingredients 👈 - 2 1/4 teaspoons (1 packet) active dry yeast - 1/4 cup warm water - 1 cup warm milk - 1/2 cup granulated sugar - 1/3 cup unsalted butter, melted - 3 large egg yolks - 1 teaspoon vanilla extract - 1/2 teaspoon salt - 4 cups all-purpose flour - Vegetable oil, for frying - Your choice of filling (jam, custard, etc.) - Powdered sugar, for dusting Directions👈 1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes, or until foamy. 2. In a large mixing bowl, combine the warm milk, granulated sugar, melted butter, egg yolks, vanilla extract, and salt. 3. Stir in the activated yeast mixture. 4. Gradually add the flour, mixing until a smooth dough forms. 5. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for 1-2 hours, or until doubled in size. 6. Once the dough has risen, punch it down and turn it out onto a lightly floured surface. 7. Roll out the dough to 1/2-inch thickness and cut out rounds using a biscuit cutter or glass. 8. Place the dough rounds on a baking sheet lined with parchment paper and cover them with a clean kitchen towel. Let them rise for another 30 minutes. 9. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 375°F (190°C). 10. Carefully add the dough rounds to the hot oil, frying them in batches for 2-3 minutes per side, or until golden brown and cooked through. 11. Remove the fried doughnuts from the oil and drain them on a paper towel-lined plate. 12. Once cooled, fill the doughnuts with your choice of filling using a pastry bag fitted with a small tip. 13. Drying the cloths after the pressing season finishes at TeePee Cider. The UV in the bring sunlight and the fresh air is great at preventing mould whilst stored till next year. We wash them in well water and with a water blaster. No soaps or other cleaners so the yeasts are not harmed. Beautifully stained golden brown with the apple tannins they carry the wild yeasts spores for the next time. The build up of wild yeasts is another reason we stay with a traditional rack and cloth press. #cider #yeast #fermentation #ciderpress

Another important factor in sake brewing is the human touch, or what the wine world might call "intervention".⠀⠀ 🍶⠀⠀ From choice of rice variety and production area, milling ratio and water content, through growing the kōji and choosing a yeast, plus temperature control during fermentation and processing after brewing, the tōji (master brewer) and kurabito (brewery staff) guide the process to a much greater degree than in winemaking.⠀⠀ 🍶⠀⠀ Before nationwide rail or road transport was available, sake breweries served their local area and brewed sake that matched local cuisine - generally lighter on the coast to pair with seafood, and heartier inland to accompany meat and preserved foods. ⠀⠀ 🍶⠀⠀ Brewing skills were also passed on through guilds, where working brewers from a region taught upcoming brewers their skills, leading to a continuity of brewing style passed down over generations.⠀⠀ 🍶⠀⠀ Today, most new brewers have degrees in fermentation science from a university, so this tie to traditional regional styles is no longer as strong. And the development of transport networks weakens the link to location in two ways: the brewery can sell sake in areas with a different food culture, and new foods - including non-Japanese ones - are being consumed in their local area.⠀⠀ 🍶⠀⠀ So where does that leave the concept of terroir as tied to the land? My latest obsession is sourdough pizza. I honestly don’t do anything different to my dough whether it’s bread or pizza or any inclusions I use. Domowa chałka - najlepsza 😋 szklanka = 250 ml Składniki (na 1 dużą chałkę lub 2 mniejsze) : ciasto : 3 i 1/4 szklanki mąki pszennej chlebowej (u mnie typ 650) / 1 duże jajko / 60 g drobnego cukru /4 łyżki roztopionego masła (ok.60 g ) / pół łyżeczki soli / 1 szklanka ciepłego mleka (ale nie gorącego ! ) / 16 g cukru wanilinowego / 20 g świeżych drożdży lub 10 g suchych kruszonka : 50 g mąki / 25 g masła / 25 g cukru do posmarowania -1 jajko roztrzepane z 2 łyżkami mleka Z mleka, drożdży, 1 łyżki mąki i 1 łyżeczki cukru (składniki ujęte z odmierzonych ilości) zrobić rozczyn. Odstawić na parę minut, aby drożdże ruszyły.  Do miski przesiać mąkę, dodać jajko, roztopione i przestudzone masło, sól, cukier oraz rozczyn*. Wyrabiać ciasto przez kilka minut (można mikserem, końcówką z hakiem), aż stanie się gładkie (uwaga – będzie lepiące!). Przykryć ściereczką i odstawić w ciepłe miejsce do wyrośnięcia (powinno podwoić objętość). Wyrośnięte ciasto ponownie wyrobić, podzielić  na 4 równe części. Każdą część zrolować w wałeczek. Z wałeczków uformować chałkę. Ułożyć ją na blasze wyłożonej papierem do pieczenia, przykryć ściereczką i odstawić do wyrośnięcia na ok.40-60 minut. Przygotować kruszonkę z podanych wyżej składników. Przed pieczeniem chałkę posmarować jajkiem roztrzepanym z mlekiem i posypać kruszonką. Wstawić do piekarnika nagrzanego do 175°C i piec przez ok. 25-30 minut (u mnie ok. 35 minut). ‼️SOURDOUGH RECIPE BELOW‼️ Always love 50-50 formula. This one has an organic millet porridge that just makes the crumb extra creamy and tender. Fermented with a young stiff rye levain. ▪️▪️▪️ Yield 4ea x 780g Loaves 580g Bread Flour 580g Hard Red Whole Grain 870g Water 28g Salt 232 Levain/Starter 174g Millet 522g Water (for soaking) ▪️▪️▪️ Directions: For the Porridge: - Soak the millet with water overnight - The next day, cook it till the millet cracks and swells and all water is absorbed. Cool For the dough: - Autolyse the flours with water and let it sit for 2-2.5 hours. - Feed the starter with the following ratio (1pt Flour, 1pt Starter and 80% Water) Let it ferment for 2-2.5 hours at 26-28C or until doubled in volume. - Mix the dough, levain, salt, and porridge. - Let it bulk ferment for 3 hours. Dough temp @24-26C - Do 2 folds 45mins interval. - Portion and pre-shape. Let it bench rest for 30 mins. - Shape and into the bannetons. Let it sit RT for 30 mins. - Cold proof overnight (12-16 hours) - Score and bake (450F): 20 mins w/steam and another 20 lid off. 苦みは無くドライですが香り豊かなので満足度の高い一杯に👍 今回はホップの使用方法としてブルースブレンドをマッシュホップし、チオールの発生を促すことでバイオトランスを発生させ、ヒノキに負けないようフルーティな香りを醸しています😋
副原料としてはJAふじ伊豆の協力のもと、こん太という品種のきんかんを1つ1つ丁寧に輪切りに加工。 ヒノキは三島市の谷田木材さんにて天然乾燥させた木曽檜を、鉋で削って共にホップニックに投入しました🪵🪓
補足ですが木曽檜は伊勢神宮等の遷宮用材にも重用されています⛩️ これほどまでに多くの要素を含んだビールですが、複雑な味わいが混じり合い、1つのストーリーに集約しています⭕️
